As for deliveries, there is a certain minimum amount, after which the order will be delivered to you for free, otherwise you will not receive any benefit. In addition, delivery delivery is different. I believe that our main advantage lies in the fact that customers see how the dishes that are sold to them are prepared. About ten years ago, sushi and rolls were almost elite dishes in Novosibirsk, but today they are sold on city highways, like some kind of shawarma. Where will this segment of public catering develop further?

To be honest, I think that rolls are already a dead end. There is no room for development here. In principle, there are already three types of enterprises that work with this cuisine: cafes, delivery and pavilions - and nothing new can be invented here. Personally, I connect more hopes with the expansion of the menu towards the cuisine of Southeast Asia in general. For example, we now sell more and more noodles. We had to work hard on it to bring the quality to the required level, we even bought certain know-how for money, but now this product is in increasing demand.

Sushi and rolls are after all an appetizer, it is impossible to dine with them (i.e. more regularly). But noodles, fried chicken, meat in sauces are normal food for every day. Moreover, the food is extremely diverse, since there can be a lot of options for tastes. I think that over time we, as in Western Europe, such Asian eateries will become popular, with small halls, or generally take-away only, where there will be a lot of tasty and inexpensive, and most importantly, freshly prepared food that you can stop by to buy on the way home or in order to eat at the office. There really is room for improvement here.

Today you already have 13 outlets, how many would you like to have in the near future?

We do not have a plan to open a certain number of outlets no matter what. Each point after all should work, bring profit. Now we are actively looking for access to new and already operating shopping centers. As for the pavilions on the streets, everything is not so simple here. Unfortunately, we have very few streets where there is a good pedestrian flow. In fact, this is only part of Lenin Street, a little Red Avenue, part of Marx Avenue. That's all, in fact - for a one and a half million city, this is quite a bit. In Krasnoyarsk, for example, things are much better with this, because there is a certain historical center where it is just pleasant to spend time. But all the same, we will experiment and try to enter new areas, since it is easier to do this with our format, and our risks are much lower than those of larger cafes or restaurants.
