Economical hostess recipes from cheap meat. Blog Archive Saving Recipes

Today's hostesses often have to come up with lunches and dinners for the whole family. In addition to the fact that eating in restaurants and cafes is quite expensive, homemade dinners are much healthier and tastier.

However, it is incredibly difficult to find really budget recipes for a family with a small income, where there are no expensive products, fancy cooking options and other nuances that not everyone can afford.

There are many ways to save every day. As a rule, these are cooking options:

1. A large pot of soup to warm up a little and eat every day;

2. Cooking meatballs or meatballs served with various side dishes;

3. Usage summer blanks and salads from cans.

But the soup is boring, and not every hostess makes preparations. Of course, if there are jars of pickles and jams in the pantry or cellar, the recipes for budget dishes for every day will be much more diverse: today soaked apple or pickled tomato for a snack, tomorrow cabbage soup from salted cabbage, lecho or peppers in tomato sauce will go great with potato sauce. You rarely see such budget dishes for every day with photos in popular magazines, but every economical hostess needs to know about them.

How to save on food for a family with a small income?

And here are some other ways to save money on cooking if income is limited:

1. Boil broth from bones: chicken, pork, beef. The broth does not need to be seasoned, flavored - it’s easier to peel a potato in the evening, throw in a little pasta or season the soup with a beaten egg. As a result, your family will receive fresh soup, and not stagnant food.

2. In the broth, cooked from the bones, it is necessary to add the whole onion during cooking, so that later you do not fry. Discard the boiled whole onion when ready.

3. If you are making cutlets, pinch off 150-200 grams of minced meat, put it in the freezer, it will definitely come in handy at a time when the budget is reduced to a minimum.

4. It is not at all necessary to cook salted cabbage in the fall, you can buy a couple of forks, pickle as quickly as possible and cook cabbage soup, borscht, dressing soups, snacks from the product.

5. Inclusion in the diet a large number available vegetables: potatoes, carrots, beets, will significantly reduce costs.

6. Expensive mayonnaise will replace sour cream with a drop lemon juice, and the rejection of mayonnaise in a week will affect the waist - extra folds will go away.

7. You can save a lot by buying products not in slices, in parts, but in whole. The chicken carcass is divided into several parts, and there are also thighs for frying, a breast for pilaf, wings with bones for broth and excellent fillet for cutlets - this is beneficial, as well as taking pasta by weight, without packaging in branded packages that cost more than the contents themselves.

8. Offal - this option sometimes passes by housewives, because "children do not eat it." But if you try to make liver in sour cream or onion sauce, homemade liver pate, liver salad with egg or fricassee - budgetary dishes that are unique in their great taste for every day will decorate your table and culinary album. By the way, the recipe for each of them is extremely simple, and you can even serve it at a family celebration. By the way, a heart, lung, liver passed through a meat grinder can be fried with large quantity onions and bake delicious pies.

9. Fish - she always saves. Frozen pollock, squid are not so expensive that you cannot afford to eat them once a week, even if the family budget is extremely limited. We will definitely tell you the recipe for dishes, and you will see that budget recipes for every day with a photo are a real find.

10. Cottage cheese, too, should not be overlooked, like dairy products. Cottage cheese makes excellent lazy dumplings, dumplings, curd buns, donuts, curd salty cream with herbs, and no one has canceled an omelet with cottage cheese. And milk is used to cook cereals and soups, sweet dishes are made and, of course, milk and its derivatives are healthy and tasty.

Remember that even if you really do not have extra finances and the entire budget is calculated to the penny, you can eat normally. Refuse expensive sauces, mayonnaise, do not buy frozen dumplings, dumplings (in terms of a unit of product, the price of such a meal is sky-high), cutlets, and buy several cans of canned fish, squid carcasses, cereals and a couple of chickens - this is quite enough for several days family with kids.

It is not necessary to sit on bread and water in order not to spend a fortune on food. Lifehacker picked up some simple and quick-to-cook dishes and calculated how much one serving would cost.

For calculations, the site of the online store "OK" with delivery in St. Petersburg was used. For all goods, constant prices are taken without taking into account promotions. Most products are not the cheapest in their segment, and the price of a dish can be reduced if you choose more available options, buy products from local manufacturers or follow special offers.

Salt and soda are not included in the calculations, since a teaspoon of these ingredients costs 5–10 kopecks, which affects the final amount very slightly. Spices are added to the taste and purse of the cook, so they were also not included in the calculations.

For calculations, the average serving size is selected. It can be modified to suit your appetite and needs. Accordingly, in this case, the cost will have to be adjusted.

  1. Cheese soup
Traditionally french dish in the post-Soviet manner, very popular among students. They cooked it like this: first, boiled carrots and onions in a saucepan with water until soft, then threw in potatoes and processed cheese. When the potatoes were boiled and the cheese melted in hot water, it turned out delicious, fragrant and rich soup. It was so appetizing that even the kids - ardent opponents of soups - slurped it with pleasure, sprinkled with crackers.

Many are trying to repeat the cheese soup from modern products, but in vain: either the curds have become different, or before, everything tasted better from hunger.

  2. Bouillon cube soup
Magic bouillon cubes "Galina Blanca" or "Maggi" could turn any dish into a culinary masterpiece. What is there! As children they were all stolen from kitchen cabinets and quietly gnawed just like that. Enterprising mothers still hid the cubes from premature destruction, and then cooked delicious diet soup: vermicelli, onion, carrot, a couple of potatoes and a coveted bouillon cube.

Soup, depending on the contents of the cubes, could be mushroom or chicken. Quite a decent first course, no one was squeamish.

  3. Beet caviar
Those who had their own garden lived best of all - they grew potatoes, carrots, beets, cucumbers, and tomatoes. But those who were less fortunate turned on the creativity at full capacity and prepared an excellent snack from just one type of vegetable. The most accessible and cheapest was beets. It was boiled, passed through a meat grinder, sugar, salt, butter were added, citric acid and languished for 5-10 minutes on fire. When chilled, such caviar "came" no worse than squash!

  4. Onion salad with only onions
Recipes with more than five ingredients were rare in those days. Inventive housewives got the hang of it and prepared a hearty appetizer from only one onion salad. The onion was cut into rings, scalded with boiling water, salted and seasoned with sour cream or vegetable oil. With a simple snack, it was difficult to feed the children, but with vodka, adults crunched such “vitamins” with delight.

  5. Oatmeal cutlets
The most favorite delicacy of the child of the 90s was a sandwich made from a piece of rye bread and a cutlet, in which there is more bread than meat. But it was so delicious! With the complete absence of meat, cunning parents cooked meatballs without it at all. They were made like this: a bouillon cube was dissolved in water, a glass of Hercules, finely chopped onions, and spices were added. Cutlets were molded from the resulting slurry and fried in oil. Served with tomato sauce or mayonnaise.

  6. Bread with garlic and salt
It is now called buzzword"bruschetta". Only earlier, instead of ciabatta or a baguette, they took a slice of black rye bread, rubbed thickly with a clove of garlic, sprinkled with salt and enjoyed. Before salting, bread could be smeared with sunflower or butter, instead of garlic, young green onions were used. If there was no cheese, sausage or salted fish in the house - it was the cheapest and most delicious sandwich in the world!

  7. Egg croutons
Basically, our practical parents disposed of dried bread in this way. But often fresh was also used for croutons. The bread was cut into slices, dipped in a beaten egg and fried in a pan. If they took a loaf, then they first dipped it in milk. Such a snack could be both sweet (then called "Poor Knight"), and salty, like a beer snack.

  8. Homemade bread cake
The easiest and quickest delicacy to prepare from what is always at hand. There were two varieties of homemade cakes: with sugar and jam. The classic foundation has always been White bread with butter. In most families, there was always jam in the house. But it was inexpressibly delicious to spread condensed milk or honey on bread. Almost anything could be made from bread, post-Soviet culinary creativity knew no bounds!

  9. Sugar lollipops in a spoon
Only the laziest did not warm sugar in a spoon. When a frantic desire to eat something sweet was overcome, they began to prepare an exquisite dessert with their own hands on gas stove. And now no one bothers to create your favorite homemade delicacy at home. To do this, it is enough to grease a spoon with vegetable oil, pour sugar into it and hold it over the fire until the sugar thickens and turns yellow.
