What can you make from red currants? A simple and tasty preparation for the winter - red currants

Good afternoon, dear friends and guests of the site “I am a villager”!
Today we continue the topic red currant, I’ll tell you about simple recipes for winter preparations and delicious desserts that can be prepared from red currants.

About the beneficial properties of red currants and its use in folk medicine, you can read in, and today we will prepare supplies for the winter.

The most popular preparation for the winter from currants is jelly; it can be prepared cold or hot, without adding gelatin. In both cases, the jelly turns out jelly-like and tasty.

  • 1 kg red currants
  • 1 kg granulated sugar

We wash the berries, grind them in a meat grinder or juicer, or you can use a blender. We rub the finished mass through a sieve or squeeze it through several layers of gauze.

Add granulated sugar and mix. You need to stir until the sand is completely dissolved.

The result is a jelly-like, beautiful mass, put it in clean jars and close with plastic lids. It turns out delicious and vitamin jelly from red currants.

It should be stored in a cool place until spring.

Recipe for hot redcurrant jelly

  • 1 kg red currants
  • 750 g granulated sugar
  • 1 packet of vanillin

Pour the washed berries into an enamel pan, add one glass of water and bring to a boil.

We wipe the finished mass through a colander or squeeze it through cheesecloth.

Pour the resulting juice into a saucepan, add the remaining sugar and vanillin. Bring to a boil and simmer for one minute.

Immediately remove from heat and pour into sterilized jars, seal with iron lids and set to cool.

This jelly can be stored for several years; I prepare it once every three years. It turns out very tasty, you will lick your fingers.

Redcurrant juice recipe

  • 3 kg red currants
  • 1.5 liters of water
  • 500 g granulated sugar

We wash the berries, add water (the berries do not need to be separated from the branches) and cook for 10 minutes. Strain through a sieve or multi-layer gauze.

Add sugar to the resulting juice, bring to a boil, boil for 2 minutes and pour hot into jars, roll up and store. This juice can be stored for a very long time.

It can be used for compotes, jelly and various desserts.

Redcurrant jam

  • 1 kg red currants
  • 1 kg granulated sugar
  • 1 packet of vanillin

Sprinkle the washed berries with sugar, mix and let stand until the berries give juice. The berries are very tender, they crush easily, I recommend stirring them very carefully when cooking.
Place on the fire, bring to a boil and cook for 1-2 minutes; currants themselves are a good preservative and do not require long-term heat treatment.
Cool and pour into jars, cover with plastic lids, or cover with parchment paper.

Freezing red currants

There are several ways to harvest red currants.

  • We wash and dry the berries, placing them on a towel. Place the berries on a baking sheet and freeze. We prepare containers or bags, lay out the frozen berries and close or tie them tightly. Place in the freezer for storage. In winter, you can prepare various desserts and bake pies from frozen berries.
  • Sprinkle the washed berries with sugar and mix using a blender. Place the prepared mixture into containers, close tightly and place in the freezer for freezing and storage.

Redcurrant marmalade recipe

Red currant berries are rich in pectin and are ideal for making delicacies such as marmalade.

  • 1 kg red currants
  • 1kg granulated sugar
  • 1 packet of vanillin

Place the washed berries in a basin, add a little water, half a glass, steam over low heat, rub the finished mass through a sieve or squeeze through multi-layer gauze.
Mix with sugar and put on low heat, cook until the volume reduces by 1.5 times, add vanillin before the end of cooking.

You can pour the finished mixture hot into jars and cover it with parchment paper and put it away for storage, so you can bake pies with marmalade in the winter.
The hot marmalade mass can be poured onto a baking sheet moistened with water and when it hardens, cut into cubes or other shapes, roll in sugar and serve homemade marmalade with tea.

You need to store this marmalade in a candy box, placing each layer with parchment paper.

And now I want to offer you some delicious desserts and sauce, which I and my family really liked. Try it, it’s tasty and healthy.

For cooking, you can take fresh and frozen berries.

Vitamin cocktail made from red and black currants

  • 1 cup red currants
  • 1 cup black currants
  • 1 glass of water, or sparkling mineral water
  • 6 teaspoons sugar

We wash the berries, add sugar, chop and beat, add water and mix with a mixer again, pour into glasses, add pieces of ice. If you are making a cocktail from frozen berries, do not add ice.

Redcurrant juice mousse

  • 1.5 cups red currant juice
  • 50 g semolina
  • 2 tbsp granulated sugar (I get by with 2 teaspoons)

We put the juice on the fire (if you take ready-made juice with sugar, then do not add more sugar), add sugar, heat, add semolina, bring to a boil and cook for 5-7 minutes.

Cool the mixture until warm and beat with a mixer. Pour into molds and let cool. A delicious dessert is ready.

Red currant dessert

  • 500 g red currants
  • 500 g sugar
  • 1 can of sour cream, 200 g
  • 1 pack of cottage cheese, 200 g

Combine the washed berries with sugar and grind with a blender. Add sour cream and cottage cheese, beat everything together, place in bowls and cool. The dessert turns out very tasty!

Redcurrant sauce for meat

  • 1 kg red currants
  • 1/2 teaspoon of ground pepper mixture
  • 1\2 tbsp salt
  • 1 tbsp sugar, without a slide

We pass the berries through a meat grinder and separate the pulp from the juice through a sieve; the juice can be obtained in any way.

Squeeze the garlic into the juice, add pepper, salt, sugar, mix everything. Delicious sauce for meat is ready!

This sauce can also be made from frozen berries.

In the world there are a lot of different dishes made from such healthy and tasty berries. It should be noted that red currant preparations for the winter, as well as developed recipes, are still popular to this day. After all, this plant produces amazing jams, jellies, jams, juices, as well as compotes.
It is easy to make jelly or thick jam from the berries, because the composition of this plant naturally has jelly-like properties and you do not need to resort to, for example, gelatin. Currants are also good when added to confectionery production. Moreover, the ground berry goes well with other fruits to taste.

Best Recipes They are mostly prepared without cooking, and they are the best because they are healthier. After all, it is known that during heat treatment, currants lose their beneficial properties. The berry, ground with sugar, will be perfectly preserved in the freezer for a long period of time, and will not lose its healing composition, and, as you know, currants for the winter are a treasure trove of vitamins.

You can harvest berries in different ways using many other ingredients and not necessarily boiling them. For example, cold jam or jelly will not take much time, and its taste will exceed all expectations.

It is worth noting that you cannot cook berries in aluminum cookware. It is better to give your preference to stainless steel or an enamel basin. After all, such sweet treats are easy to prepare in wide dishes. Moreover, as many chefs believe, wide dishes help preserve the integrity of the berries, if necessary. That is, they do not put pressure on each other with their weight.

Before preparing berries without heat treatment, that is, without cooking, it is necessary to treat the container with boiling water. This approach will help reduce the risk of fermentation, as well as remove excess trace elements that can further spoil, as well as appearance the dish and its taste.

For children, you can prepare sweet puree that looks appetizing. Add it to milk porridge or ice cream. In this way, the child will receive a lot of necessary vitamins for his body, and if he doesn’t like the seeds, then when preparing currant purees, they are ground through small sieves.

The berries can be pureed to prepare for the winter as jelly, which does not require cooking. Just after the process is completed, you need to prepare disposable containers, put the jelly in there and put them in the freezer.

You can also prepare mini-desserts, which will delight your hosts during the cold season. festive table. To do this, ground berries are placed in layers in disposable containers. For example, first black currants and then red ones.

Thus, in its final prepared form, the dessert will resemble a bright “zebra”, which will appeal to both kids and adults. You can also make jelly.

Just start by grinding everything in a separate container, and then carefully fold the layers and freeze each separately. That is, to prevent the berries from mixing their colors, first lay one layer, freeze, take out the container and lay the next one. The ground berries should have a uniform consistency. This is done quickly so that the previous layer does not defrost and loses its valuable composition.

Frozen berries with sugar for the winter will retain their vitamin content as much as possible. natural composition. Unlike other preparations, which will go through all sorts of heat treatments, even if it takes a couple of minutes. Therefore, before cooking, you should think about how to make winter dishes not only tasty, but also healthy.

I make redcurrant jelly every year. To do this, crush the currants along with the branches with a masher. I transfer the resulting mass into cheesecloth in portions and squeeze out the juice. I mix it with granulated sugar in a 1:2 ratio and leave it for a while at room temperature to dissolve the sugar. I stir it periodically. Then I transfer the jelly into jars and store it in the refrigerator. The taste of this jelly is natural due to the fact that the berry does not undergo heat treatment and more beneficial vitamins are retained in it.

From red currant you can prepare many delicious things for the winter: make ice-cold red jam for the winter from raw currants, as well as jams, marmalade, jellies and other delicious preparations.

Among other things, red currants can be added when preparing vegetables in jars for the winter to improve the taste, for example, make cucumbers with red currants. So the preparations can be not only sweet, but also in the form of pickles and marinades, as an addition to vegetables.

There is also a recipe adzhiki from red currant

It turns out very beautiful in appearance and appetizing, it will surprise everyone with its interesting and unusual taste.

Let's take it according to the recipe products:

    red currants - 400 g,

    one bell pepper,

    four chili peppers,

    garlic - 4 pieces,

    half a glass of salt

    one glass of sugar.

Everything you need is ready, let’s do it adjika.

You should wash the currants, rinse and remove seeds from both types of peppers, peel the garlic and then chop using a blender/meat grinder.

The next day you can transfer it into clean, sterilized jars, cover with lids, close tightly and store inside the refrigerator until winter.

    Bon appetit!

You can make jam from red currants for the winter. Another good thing is red currant jelly without heat treatment. At the same time, the berries perfectly retain all their beneficial properties until the next harvest. To prepare the berries, you need to wash them, grind them using a food processor, mix them with sugar one to one and stir with a blender. Place the resulting mass into jars.

I know that almost no one makes redcurrant jam. It turns out too watery, and the berry floats like skin.

In order to preserve its aroma and beneficial properties, they make redcurrant jelly, squeezing the juice in any way and mixing in proportions 1:1.5. This means taking at least 1.5 kg of sugar per liter of juice. Stir until the sugar dissolves, pour into clean jars.

Stores perfectly in the refrigerator. The taste and color are wonderful!

In winter, you can spread it on a bar, add it to tea or kefir, getting natural yogurt.

You can make a lot of things from red currants, both for the winter and now for dessert - jellies, jams, preserves, marmalade, compotes, etc.

Here are traditional and original recipes for red currant preparations.

Red currants are frozen and added when cooking compote, preserved for the winter with berries and vegetables, and cooked different dishes for dessert dining table. You can make ice cream from red currants; the recipe will require:

    • 300 grams of red currant juice,
    • 1 pack of cream,
    • 100 grams of sugar.

Add sugar and cream to the ground berry mass. Beat until smooth. Place in the molds to freeze overnight. In the morning, the popsicles will be ready.

You can make a sauce from red currants and serve as a side dish.

The best jelly is made from red currants. To do this, rub fresh berries through a fine sieve so that the seeds do not get in. Add sugar to the puree. I add enough to double the volume. You need to prepare small jars in advance. Stir the puree until the sugar dissolves, then pour it into jars, after a while it will thicken, I pour a little granulated sugar on top of the jar. This puree lasts well all winter. I always add a little puree to sour cream, it becomes pleasant pink color and with sourness. This puree makes a very tasty white ice cream sundae. You can add it to sand baskets, and simply with tea in winter it’s very tasty and healthy.

Red currants can hang on the bushes for a very long time, almost until autumn. Of course, you shouldn’t wait for it to fall off the branches, but you still shouldn’t collect the one that has just turned red: let it hang, then it will be easier to separate from the branches. Although for better preservation it is necessary to collect it with the branches, but then, after you wash the berries, you will have to separate them.

However, some housewives make compote for the winter from red currants with twigs: they say it turns out more fragrant. But it seems to me that they just don’t want to bother.

If you decide to make jelly from red currants, then you must first simmer the currants on the fire, then it will be easier to rub through a sieve. Pour into a bowl, add a little water so that it doesn’t burn immediately and heat over low heat until the juice begins to stand out. Then wipe, add sugar in the proportion of 1.5 kg per 1 kg of berries. Heat together with sugar until completely dissolved, boil until thick and put into jars.

In the meantime, it comes to preparations, you can prepare a delicious red currant roll.

You can also make a sauce for meat from red currants: for this, just fried butter add berry puree to the flour, add salt, add a little sugar and boil: simple, but tasty.

It is necessary to squeeze out the juice either using a manual auger-type juicer, or using a blender and sieve. Then mix it with honey 1:3 by weight. Honey 3 parts. Pour into sterilized jars and close with regular jars. nylon covers, Keep refrigerated.

Red currant berries can also be dried and added to tea in winter.

You can also puree red currants with sugar. Sugar 1:2 by weight.

You can make redcurrant compote for the winter.

Red currants are valued for their complex of especially valuable vitamins C and P; they also contain the substance coumarin, which regulates blood clotting. From currants you can make comp;ot, jelly, jelly, delicious muffins, sauce for meat dishes, jam, syrup, homemade wine. I think that this is not a complete list.

Winter preparations from red currants are rarely made in the form of jam. The reason is the ability of this berry to gel. Although even under this condition there are recipes for jam. You can enjoy it just like that or dilute it to make a fruit drink. How to make redcurrant jam? Check out the tips and recipes below.

Red currant preparations

This berry is one of the most common. A variety of desserts are prepared from it, such as jam or jam-jelly, compotes, confiture, jam or marmalade. This allows you to save the harvest until winter, because it will not stay fresh for a long time. Red currants bring no less benefits than black currants. It is especially rich in vitamin C, which is why it is used for bleeding, fever, as a diuretic and diaphoretic. To prepare redcurrant jam for the winter, you must first harvest the crop correctly and on time, and then prepare it.

How to choose berries for currant jam for the winter

These berries quickly ripen, which is why they become soft. They must be collected on time and prepared immediately. The harvest needs to be sorted, removing stalks, husks, leaves and other debris. It is better to do this using gauze or a fine sieve. You can leave a few branches, but then there is a risk that the jam will not last so long. Processing must be carried out very carefully so as not to touch the soft skin. You should not keep the fruits in water for too long; you need to rinse them and place them in one layer on a napkin to allow the liquid to drain.

Preparing jars for canning

To make redcurrant jam for the winter, you need to put it in sterilized glass jars. To do this, they are heated in the microwave or oven. In addition to this option, there is a method of sterilization over steam. At the same time as this procedure, you need to do the same with the lids. Only here for sterilization you need to boil water. Then the lids are placed in it for a few seconds. This must be done immediately before seaming.

Redcurrant recipes for the winter

An integral ingredient of any jam is sugar. Its quantity depends on the specific cooking method. Recipes for preparations with this berry may require a little more sugar, because this berry has a sour taste. The optimal ratio is considered to be 1:1.5. Although those who love more sour taste, you can take sugar and berries in a 1:1 ratio. It is important to observe the cooking time. In traditional currant jam recipes, it does not last more than 15 minutes. There are also faster cooking methods, for example, without cooking at all. This and other options are presented below.

How to make redcurrant jam (5 minutes)

The simplest recipe for red currant jam for the winter is “Five Minutes”. Here the delicacy undergoes a very short heat treatment, so a little more granulated sugar is required. List necessary ingredients it turns out like this:

  • sugar – 1.5 kg;
  • water – 1 glass;
  • berries – 1 kg.

The preparation of the delicacy is carried out in several stages:

  1. Preparation of syrup. To do this, bring water to a boil, add sugar and cook until this ingredient dissolves.
  2. Introduction of berries. After the syrup boils, add the fruits, then cook the delicacy for 5 minutes, stirring constantly.
  3. Rolling up. The finished delicacy is poured into sterilized jars and tightly closed with lids.

Currant jam without cooking

Of all the methods for preparing currant jam, this can be considered the simplest, because the stage of heat treatment of the berries is excluded here. For this reason, a different amount of granulated sugar will be needed to ensure the finished product lasts longer. The calorie content is higher than that of regular jam. The list of ingredients looks like this:

  • granulated sugar – 2 kg;
  • currants – 1 kg.

Preparing the delicacy is very simple. To do this you need:

  1. Harvest sort, wash and dry, then grind with a meat grinder or blender. You can grind through a sieve instead. Squeeze out the cake, because the juice remains in it.
  2. Add granulated sugar to the puree and stir with a wooden spoon until the sweet ingredient is completely dissolved.
  3. Place the berry puree into jars and seal with sterile lids.

This cooking method is also called “cold jam”, due to the fact that there is no heat treatment products. Here you can use a regular masher rather than a meat grinder or blender. The latter device is not recommended for use, because it destroys some of the vitamin C. “Cold jam” can not only be rolled into jars, but also stored in the freezer until winter.

Redcurrant jam-jelly

The next method is original, because the result is not just jam, but jam in the form of jelly. It turns out very tasty due to the fact that red currants contain pectin. This substance is responsible for the ability of this berry to gel. For the jelly you will need:

  • water – 1 glass;
  • sugar and the berries themselves - 1 kg each.
