1. TYPES

3. TECHNICAL REQUIREMENTS

3.1. Design requirements

3.1.1. Washing and sorting machines must be manufactured in climatic version UHL category 4 according to ST SEV 460-77.

3.1.2. Types I and II washers must be supplied with a tray to be loaded from a pallet box.

3.1.3. Types I and II washer-sorters must perform locking, active washing, sorting and rinsing operations.

3.1.4. The drive of the machines must provide stepwise regulation of the speeds of the conveyors.

3.1.5. The movement of roller and belt conveyors must be smooth, without shocks.

3.1.6. The design of roller conveyors should allow replacement of rollers without dismantling the chains.

3.1.7. The rollers should easily rotate around their axes and rotate periodically when moving along the guides.

3.1.8. All internal and external surfaces that do not come into contact with products must be treated with an anti-corrosion coating, if necessary.

3.1.9. The shower system must provide the possibility of monitoring its operation.

3.1.10. The nozzles of product rinsing shower systems must be replaceable and made of corrosion-resistant materials.

3.1.11. Leakage of water through welded seams, seals of fittings and pipe connections is not allowed.

3.1.12. The design of the machines should provide the possibility of mechanized removal of sorted raw materials and waste.

3.2. Reliability Requirements

3.3. Safety requirements

3.3.3. All moving and rotating parts of machines that pose a risk to service personnel, must be closed with safety covers in accordance with ST SEV 2696-80.

3.3.4. The drive of the machines must be switched off when the working bodies are overloaded.

3.4.3. The noise level during the operation of machines should not exceed 85 dB on the A scale in accordance with ST SEV 1930-79.

All contamination on the surface of the raw material (soil, sand, dust, insect or bird excrement, adhering parts of plants, etc.) must be removed. Together with pollution, up to 90-95% of microorganisms are removed. This guarantees high quality canned food and ensures their reliable preservation for a long period.

Raw materials are usually washed after inspection and calibration. If wet fruits or vegetables are calibrated, they will moisten the inspection and sorting equipment, and this will increase the microflora contamination of raw materials.

However, many types of raw materials arrive for processing highly contaminated with soil or dust, as a result of which it is difficult to detect defects. It is advisable to first wash such raw materials and then inspect them. This is the case with tomatoes, for example. It is impossible to be limited only to the primary washing of raw materials. When peeling and cutting, fruits and vegetables are inevitably contaminated again and therefore, after cleaning and cutting, they must be washed again. The raw materials are washed additionally even if they touched the prepared raw materials with their hands and thereby could increase its contamination with microflora. Such raw materials must be rinsed in the shower. In some cases, washing is required not to remove contaminants, but due to improved technology, for example, to remove starch from cut potatoes or from blanched pasta, etc.

Washing machine systems are diverse, some of them are quite versatile (elevator, fan, shower), others are specialized in processing a certain kind raw materials (blade for potatoes and root crops, berry, flotation for green peas, sweet corn, etc.).

Very contaminated potatoes and root crops are well washed on a paddle washer, the diagram of which is shown in fig. eleven.

On the basis of this machine, the KUM-I machine is manufactured, which has a blower for blowing air into the water zone under the conveyor. On the basis of the same machine, the KUM-II machine is also made, which has a brush insert in the water zone, which is very convenient for removing dirt from cucumbers, eggplants, etc.

Tomatoes, cucumbers, eggplants, apples, etc. are washed in a drum washer. It is a rotating cylinder made of metal corners with corners facing the center of the cylinder.

In its upper part, a fixed perforated pipe is mounted through which water is supplied for washing. When the cylinder rotates, the fruits are pushed through the ribs of the corners, rubbed against each other, irrigated with water jets, and all this contributes to a thorough washing of fruits and vegetables, without any damage to them (Fig. 13).

For rinsing raw materials after cleaning or cutting, as well as for cooling after blanching and for other washing operations, a washer-shaking machine is used (Fig. 14).

The mesh tray of this machine has a reciprocating motion, which shakes and rotates the raw material, which is simultaneously rinsed clean from the upstream shower funnels. cold water. Due to the inclination of the tray and due to shaking, the raw material moves towards the unloading.

Meat grinders and tops are designed for coarse grinding of raw materials.

The principle of operation of meat grinders (tops) is the same. The product, getting into the cutting zone, i.e. between the rotating cross-shaped knives and the fixed gratings is crushed to a degree corresponding to the diameter of the holes of the last grate.
