Interview

When I saw an advertisement for employees at KFC, I called one of the numbers, and I was invited to fill out a questionnaire. Director Catherine arranged a small interrogation about my stress resistance, work experience, the possibility of going to the morning shifts.

“With your work experience (3 years in a coffee shop, - author's note), I can offer you to stand at the checkout. Along with this, you will be an employee of the hall, like a waiter, - explained Catherine. —After an internship and a couple of months of work, you can cross-train as a breadmaker and a kitchen worker. This is a sure step to promotion - you will become a coach, a manager. We have a great career growth in the company!”

Ekaterina told that KFC differs from the local public catering: it is not customary for them to pay tips, and the bonus part will be paid once a quarter. And then, if the restaurant successfully passes the certification. Official employment, full social package, home delivery by corporate transport.

I was immediately warned that a team member had to do the cleaning. I, like an obedient sheep, agreed to everything. And on repeatedly question asked: "Are you ready to clean toilets?", I answered: "Yes! Yes! Yes!".

Internship

The training lasted three weeks. 10 cashiers came to the first lesson (half of them "fell off" almost immediately). We were given training material - a whole bunch of standards that we must comply with. Then we did online training. The company Yum!, which owns KFC, has a learning zone training system.

According to the standards, cashiers are required to wash their hands every four hours (kitchen workers - every hour), as well as if they touched hair, other people, clothes, non-food products, and so on. We are given 20 seconds to wash our hands, and we must use not only soap, but also a disinfectant.

The company has a certain system C.H.A.M.P.S. is an acronym for cleanliness, hospitality, precision, service, quality and speed. A sort of battle cry for the greatness and prosperity of KFC. It was hammered into our heads that teamwork is needed to achieve these letters of the law: if the kitchen assembles the sandwich correctly, the cashier will quickly sell it, and even smile at the guest - he will be pleased, like a cat who has eaten sour cream.

Not everyone bothered to cramming. Until they went to work, most cashiers did not even know the composition of sandwiches. I frantically studied the menu half an hour before the main test, which I successfully copied. After that, some of us were told that we can bring documents for employment. The rest were offered to hand over the menu again.

Chefs (mostly university students) learned how to cook burgers only in theory: they studied shelf life and packaging methods. Practical classes were held with plastic rolls, tomatoes and cheese. First real practice they had the day before the technical opening.

Employment

I was told to bring a standard package of documents: passport, TIN, SNILS, work and medical books. I became the only one who did not bother about passing a medical examination. Just "has fussed". And all three weeks I listened to everyone who served a queue in the hospital and passed a lecture on SanPiN. And for questions: "How do you like the lecture?", - had to lie: "Oh, such a mournful bullshit!" My new friends are Egor, Semyon, Alexander, Kechii and Malika They nodded knowingly in response.

I signed the papers for employment, the contract for liability. At the same time, she did not write a statement with the standard wording: "Please accept me...". instance employment contract with the signature of my future employer, they never gave it to me.

Schedule

The schedule is shifty, presumably 5/2, while I can leave wishes for work in order to have time to combine with my studies.

A week before going to work, we were offered to leave wishes for the schedule: on a special form, we wrote the time at which it would be convenient for us to go to the shift. However, only three of my seven wishes were taken into account. Judging by the tantrums of fellow cashiers, who yelled that they were studying these days, the same situation developed with them. As the manager explained Olga, you can exchange with each other (which we did), and warned that there were few employees, at first it would always be like this, so we would have to adapt.

brigade

The team, which is usually called a team or a brigade in KFC, has about 30 employees: two directors, two deputies, two managers, the rest are kitchen workers, panners and cashiers. At the same time, there is practically no division of labor between them, at least that was the case in the first week of the restaurant's operation.

The team at KFC is really friendly - at work you feel like a fish in water. Everyone communicates on "you", but the limits of decency in communication between the director and the subordinate, of course, exist.

The team is mostly made up of students. In the first week of opening, in addition to performing direct duties, everyone had to clean workplaces and the restaurant as a whole, including mopping floors and toilets. Even after my dismissal, KFC recruited women to clean the premises.

Opening team

The day before the technical opening, the "opening team" from Perm and Saratov arrived in Kemerovo. The guys are friendly but strict. It was then that we realized our inferiority in service. Manager Victoria with about two years of experience, she demonstrated her talent as a cashier - from such a service dialogue, our eyes just went out of our heads. Vika tenderly assured us: “Kittens, everything will be fine! You will be smart!"

In the first days of work, it turned out that there were no such wild visitors to KFC as we have in any city where the opening team visited. As explained to me later Vika, in Kemerovo, they have been waiting for the opening of the restaurant for almost a year, and when a couple more establishments are opened, people will be distributed to these points, and there will be no long queues. However, the “Drive” zone was immediately predicted to be flooded with orders - after all, this is the only catering service for drivers in the city.

Let's wait and see, I thought. And life is only one dream left. By the way, it was the last one for the week that I worked at KFC.

family day

The technical opening took place on November 24 and 25 (from 16:00 to 20:00) under the name Family Day. Only acquaintances were served, who were given coupons for 500 rubles in advance. We arrived a few hours before opening to get ready. They put me and Malika on the “Drive” zone, which scared me a little - I never practiced taking an order through a headset. In addition, I got sick - my throat caught, my temperature rose, but no one cared about that.

While visitors attacked cashiers in the main hall, equipment broke down, and team members handed out french fries and Pepsi for free, it was boring on Drive - motorists did not yet know that KFC-Auto existed. When the first car arrived, I took the order, and the packer Semyon, confusing "burger" and "twister", he collected dishes in a bag. In the end, everyone coped - as the manager said Vika from Perm, this is because we are a very friendly team.

Soon my cash register broke. I, leaning out the window at -30 degrees, listened to the wishes of the guests, the administrator Anton wrote them down on the coupon and ran to the packaging. In this mode, we worked the remaining three hours.

Panner Edik said that they almost immediately stopped working according to the standard - in disposable gloves - because they fly off the hands. And attempts to try at least a piece of chicken were unsuccessful - everything that seemed unfit for use to the coaches, they simply threw it away. Although at the end of the day one of the girls quietly brought me a box of treasured products with a whisper: “Run faster, you can’t do that at all. But you deserve it!"

On the second day it became much easier - embarrassment and fear disappeared, I took orders much more confidently. In general, the day resembled the past. And at the end of the working day, the whole team gathered in the hall - the guys from Perm and Saratov were delighted with how well-coordinated the team we got. Everyone was given recognition cards for the best breading, for the best burger, just for smiling. And for me - for 150% hospitality. A trifle, but nice!

Official opening

On the morning of Wednesday, October 26, with a rag in my hand, I was sent to the toilet. In theory, it was necessary to wash the floor and toilets, but I only twirled in front of the mirror for five minutes, took a selfie and went into the hall to clear the trays from the tables. I still don't understand why the workers who make and sell burgers have to clean the toilets...

Visitors

Even before the opening of the restaurant, Kemerovo residents periodically approached the doors, knocked, expecting that they would be immediately opened and treated to branded chicken. Our coach showed true "guestmania": she rudely sent the visitors away.

In the first days, the guests behaved inadequately: the crowd was wild, nervous, hungry. Thursday, Friday and Saturday became groundhog day for me. We thought that there would be fewer guests, but there it was. In two days, glasses of 0.5 volume, forks, spicy seasoning, and even the chicken did not have time to defrost, ended. Why visitors terribly angry, rolled their eyes. “Why then was it open?”, “Yes, what to take with KFC, an eatery!”, - such phrases had to be listened to constantly. Some turned around after half an hour of waiting and left. To which I, my colleagues and even the director had one answer, which we expressed only in the "smoking room": “What are you going for then? It’s like we live in a “scoop”.

Some guests were still happy. Even at the technical opening, a man took a picture of me, wishing me good luck and saying that everything is wonderful and delicious with us. And at the checkout, a couple of customers left me a "tea", although this is not accepted in KFC.

“You have a wonderful smile, and in general everything is so radiant. Patience and more good customers to you!” One man made me happy.

And indeed, it’s simply impossible not to smile at such guests, so they received orders from me much faster than people who were dissatisfied with the queues.

Work days

In the kitchen all these days there was an incredible "zapara". No one was in charge. The deputy director breaded the meat, the director packed the chicken into boxes, the managers assembled the sandwiches.

“I don't like Kemerovo. You have strange people, some very hungry,- complained to me Kristina, manager from Saratov. — I thought I would come here, I would improve my managerial skills, but I have to stand at the checkout.”

I stood for several hours, and at the same time I absolutely did not feel my legs and fatigue. I forgot about everything, and only one thing was spinning in my head: what is available from the menu?

In a few days, we threw out more than one kilogram of chicken - the pieces flew to the floor, chaos reigned on the breading, and no one thought about snatching a piece of meat for themselves. If only to let go of the hungry visitors with God.

Arriving home, I did not remember my name, only the smell that had ingrained in all my clothes fried chicken brought me back to reality and reminded me that tomorrow I have to go to this hell again.

Products

All products are brought from Novosibirsk frozen. The main chicken producers are Moscow companies: Chiken Factory and Garibaldi. The meat comes in vacuum packaging in two versions: in a spicy marinade orange color(for spicy products) and milk marinade (for original products). Buns also come to Kemerovo frozen. The rest of the products - tomatoes, lettuce, croutons, cucumbers, onions - are always fresh, and do not stay in the kitchen for a long time. Most of the products come already cut - even buns.

Frozen products are stored in refrigerators. Before using chicken or buns, they are pulled out of the freezers. The products are thawed for about an hour (do not use microwave ovens for defrosting). All non-food products are stored in the warehouse. But there is not much space there, so some boxes are right in the hallway.

For breading, Altai flour is used. First, the chicken is rolled in flour, shaken on a special grill and fried in the oven. For breading spicy products, a certain seasoning is used: it is brought in a vacuum silver bag, on which the composition is not even written. Whether flavor enhancers such as monosodium glutamate are added to the chicken is unknown to any employee, even an experienced one. This is the business of the manufacturers, and the team member does not need to know what he is selling - the visitors are happy, and that's okay.

Ready chicken is stored in heating cabinet no more than half an hour. At 31 minutes, it is written off and thrown away. Burgers are collected as needed, but sometimes more than the bill requires. Sandwiches and french fries lie on a thermal showcase for no more than 10 minutes.

Security and revenue

There is no security at KFC. For unforeseen situations, there is a red button.

Looking after the staff all-seeing eye”- the video camera hangs over the cash registers, but the management does not use it much. But in the premises for staff there is no video surveillance. Therefore, after closing, some cooks and cashiers managed to fill their mouths with branded chicken and even take it out of the institution.

Cashiers often handed over the proceeds with a "plus" of a thousand rubles or more. The biggest “plus” that the cashier handed over in my presence was 4,000 rubles. According to the regional manager Marinas, this was due to the fact that in Kemerovo KFC is not respected cash discipline, employees do not monitor the contents of their cash register, for which they are financially responsible.

Sanitation

During the training, we were told a lot about standards and cleanliness. However, in reality, everything turned out not quite the way the management would like. We were required to wash our hands every four hours and every time we touched clothes, face or other people. In fact, in my week at KFC, I washed my hands once a day, just before I started my shift. I think that the rest of the cashiers also did not bother to restore cleanliness.

Breaded chicken kitchen workers are required to wear disposable gloves. However, after an hour of work on the day of the technical discovery, I noticed that the guys did not have them on their hands. As the breadmaker Edik explained, this is inconvenient. And the opening team turned a blind eye to this violation.

All week the kitchen was in unimaginable chaos - the chicken flew on the floor, employees slipped on it. The breaders were covered in flour from head to toe, despite their protective aprons. After working days, the restaurant had to be washed by the whole crowd until 5-7 in the morning. Therefore, after a couple of days, KFC began to work from 10:00 to 23:00. And the “Drive” zone had to be completely closed due to a lack of workers.

Dismissal

When I told the director that I needed to quit, she looked at me with sadness and bewilderment. Began persuasion, arguments. Most strong argument- Great career progression.

My dismissal was a small loss - the next day, when I arrived to pick up the documents, the director asked me to leave for a couple of hours. As a result, I arrived at 14:00, left late in the evening. I did not receive any documents that day. After she handed over the money from the cash register, the director said: "You'll take it if you stay to work until midnight."

Salary and bonuses

All team members, including cashiers, receive only hourly pay- 90 rubles. According to the norm, everyone must work 160 hours a month. A bonus on the amount of revenue, as in other catering establishments, is not provided here. But every three months, employees are paid a bonus for complying with C.H.A.M.P.S. Nobody told us the exact amount.

In addition, KFC offers bonuses for visitors' reviews on the site: a special resource is indicated on the check, where the code is entered, after which they write an opinion. For 5 personal reviews, an employee is provided with a bonus of 5,000 rubles. On the account of the Kemerovo KFC there were three such opinions: two addressed to me, one - the manager Olga. In general, they didn’t give me a bonus, since this bonus should be only in January.

I worked 74 hours a week. In the accounting department I was greeted joyfully and paid 6660 rubles. They returned the medical book and the labor book, which now flaunts the entry - "a member of the brigade."
