I used to buy whole bags of sweet icicles for my daughter: she constantly carried them to school and on walks. But I wasn't sure if they were good for my baby. So one fine day I decided to experiment: I made the lollipops myself. Still, my child’s health comes first for me, so I will not use harmful substances that will make these treats attractive.

They turned out very tasty and my daughter liked them. Although now her love for candy has faded (which I’m glad about: a lot of sweets are bad for your health), I sometimes spoil her with homemade candies.

The candy on a stick appeared in 1958 at the hands of a Spanish confectioner, but he did not discover America: sweet cockerels were cooked in Rus'.

Lollipop recipe No. 1

To make lollipops you will need the following ingredients:

4 tbsp. l. Sahara;
1 tbsp. l. juice of any berry (you can use fresh strawberries or, for example, frozen raspberries) or water.
1/4 tsp. lemon juice;
a little vegetable oil;
molds for lollipops (children especially like lollipops in the shape of different animals); as an option - silicone ice trays.

Lemon juice is an important ingredient: Citric acid prevents sugar from crystallizing.

So, here are step-by-step instructions for making lollipops.

1. Take a saucepan with a thick bottom, pour sugar into it, add berry and lemon juice.

2. Cook the syrup over medium heat for about seven minutes.

If you are not sure whether the syrup is ready, you should drop a couple of drops into a glass of cold water and see what happens. If the syrup has reached the desired condition, the drops will immediately harden.

3. Pour the sweet syrup into the molds (you must first grease them with vegetable oil), insert wooden skewers and refrigerate for 20-30 minutes.

Lollipop recipe No. 2

To prepare you will need the following ingredients:

4 tbsp. l. Sahara;
2 tbsp. l. water;
1 tbsp. l. vinegar (9%);
silicone ice trays;
wooden skewers.

  1. Pour sugar into a saucepan and pour in water so that it slightly covers the sugar.
  2. Place over high heat and bring to a boil, stirring constantly.
  3. When you see foam covering the syrup, add vinegar to prevent sugaring.
  4. Let the syrup simmer for about five minutes (the heat should be lower).
  5. Pour the finished mixture into ice molds, let it cool slightly and insert the skewers.
  6. Place in the refrigerator to harden.

I really hope that you will not be lazy and make homemade candy for your child. After all, this is not just a tasty, but also a healthy delicacy. By the way, I myself love to chew on cockerels, which take me back to my youth.

Lollipops

Which kid doesn't love delicious lollipops? During our childhood, such lollipops could be bought in the form of cockerels, squirrels, and bunnies. Well, our children have to be content with all kinds of lollipops and other candies that contain many harmful additives, but the health of the child is above all for the mother. Therefore, I would like to invite you to try making lollipops.

You can be confident in these lollipops because you know their composition. Once upon a time, special molds for making lollipops were sold, but it’s unlikely that anyone still has them; silicone molds are not suitable for these purposes, since they can melt under the influence of hot syrup. But don’t despair, because foil can make wonderful molds.

I offer you a basic recipe for lollipops. Ingredients of homemade sweets:
. Sugar - 4 tablespoons
. Water - 2 tablespoons (water can be replaced with fruit juice)
. Vinegar - 1 teaspoon
. Food coloring - on the tip of a knife (but you can do without coloring)

Recipe for making homemade candy.

If you have silicone ice molds, you can use them for lollipops. But, unfortunately, I don’t have those, so I came up with foil molds. For this we need foil. We make a strip out of it. Homemade lollipops.


We cut this strip into several parts.


Take a regular stack and wrap the bottom in foil.

I trimmed off the extra pieces of foil, and these are the shapes I got.


Now carefully insert a toothpick into each mold.


The forms are ready. Now let's make caramel. Pour sugar into a saucepan or frying pan, add water and vinegar.


Place on low heat. When the caramel boils, add coloring.


The caramel should boil a little. If a drop of caramel immediately cools in the water, then the caramel is ready. We literally add a drop of sunflower oil to each mold so that the caramels do not stick to the molds.


Pour caramel into molds.


If you want, you can decorate the caramels a little with different confectionery decorations.


After 10 minutes, the fireplaces are ready and can be removed from the molds. Homemade lollipops are ready. As you can see, there is nothing complicated in making candy.

Lollipop cockerel


The simplest recipe for classic lollipops:
4 tbsp. l. Sahara
1 tbsp. l. water
Boil sugar and water over low heat until transparent (a drop of syrup should instantly solidify in cold water), then add a little vinegar (apple vinegar is fine) or a grain of citric acid (it is important not to overdo it with acid) and, for flavoring, a drop of essence.
Pour into greased molds, insert pre-prepared sticks - frozen - ready.
Instead of water, you can try adding some kind of juice - here you have flavoring and natural coloring.

Burnt sugar candies:

Add 250 g of granulated sugar to the pan, add 1 tablespoon of powder or vanilla sugar and 50 g of cognac. Place it all on the stove, hold for no more than 1 minute, while stirring thoroughly.

Now remove from the stove and add a few drops of lemon juice and peppermint oil.
Pour the syrup into small molds and let it cool. Place the stick in the mold so that it sticks when the candy has completely hardened.

Chocolate caramel

125 g sugar
125 g honey
125 g chocolate

Cook sugar, honey and chocolate over low heat. If a drop of boiled chocolate mass immediately thickens in cold water, the caramel is ready. It can be poured into molds or poured onto an oiled or water-moistened plate, and then cut into squares.

To make the lollipops you will need the following:

First you need to pour water into a saucepan and pour sugar into it. Place it over medium heat and let it simmer for 5-9 minutes, stirring occasionally. Without turning off the heat, add one and a half tablespoons of vinegar to the pan and mix thoroughly. Wait a little, add another one and a half tablespoons of vinegar and mix again.

When the future caramel acquires a golden hue, turn off the heat. If you have molds for lollipops, grease them with sunflower oil and pour caramel into them. We insert toothpicks into the molds - they will be sticks for lollipops. Once the candies have cooled, they are ready to eat.

Lollipops "Childhood"

All my childhood I crunched on these candies. With big eyes, I sat and watched carefully, trying not to miss anything, as my mother prepared these delicious candies for us: and then it seemed to me that nothing else could be tastier than these candies. Time has flown by... and now my girls are crunching with such candies!!! The recipe is quite simple:

Ingredients:

Sugar - 6 tbsp.

Water - 6 tbsp.

Vinegar (9% take 1 tbsp) - 0.5 tbsp.

Vegetable oil (for greasing the mold)

Preparation:

Cook over medium heat for 15-18 minutes. Stirring constantly.

    When the caramel becomes homogeneous, pour it into molds. This must be done very quickly - the caramel hardens quickly!

    Who among us does not remember the sweet “cockerels” on a stick that were sold (and are still sold) on the streets? This is a wonderful delicacy that modern children also like. The recipe for sugar candies is simple, you can make them every day.

    Classic lollipops

    Ingredients:

    • 200 ml water.
    • 500 g sugar.
    • 2 tbsp. vinegar.
    • 1 tsp rast. oils

    And you will also need toothpicks.

    Preparation:

    1. In an enamel (preferably) or aluminum pan, combine water, vinegar, sugar. Stirring, cook over medium heat until the sweet mass acquires a deep yellow color.
    2. Grease the molds with oil and pour the sweet mixture into them. Place a toothpick in the middle. Wait until the sweet mass has cooled completely.
    3. Remove the homemade sweets from the mold and enjoy this wonderful and simple treat.

    Taffy

    Another classic recipe that doesn't require much time.

    Ingredients:

    • 200 g sugar.
    • 60 g honey.
    • 20 g butter.
    • 200 g sour cream.

    Preparation:

    1. Honey for making toffees should be liquid. If it has hardened, preheat it. Mix sour cream, sugar and honey into a homogeneous mass.
    2. Now heat the sweet mass over low heat, stirring until it boils. Keep in mind that with high heat the food will burn to the bottom of the pan.
    3. After boiling, cook for another 20 minutes. Stir constantly. The mixture can be considered ready when it is viscous. You can check readiness by dropping it into water. If the drop hardens, you can pour it into molds.
    4. Grease the candy molds with oil and pour the sweet mass. Wait until it hardens completely.
    5. You can diversify the taste of sweets by adding seeds, nuts, pieces of prunes and other additional products.

    Strawberry caramels

    Ingredients:

    • 100 g sugar.
    • 1 tsp lemon juice.
    • 20 g plums. oils
    • 40 ml strawberry juice. Instead of strawberry, you can use any other one - you will get candies with different flavors.

    Preparation:

    1. Mix all ingredients and bring to a boil over medium heat.
    2. After boiling, reduce the heat. Cook, stirring constantly, until the mixture thickens a little and darkens slightly.
    3. Immediately after this, pour the syrup into greased molds. If you use silicone molds, they do not need to be greased. Homemade sweets can be eaten when frozen.

    Orange zest in glaze

    Ingredients:

    • 250 g sugar.
    • 3 oranges.
    • 100 g chocolate.
    • 20 g butter.
    • 300 ml water.

    How to do:

    1. Wash the oranges and cut them into four parts. Then carefully peel off the peel and wash it. Cut the peel into strips 5-7 mm wide.
    2. Pour water over the zest and bring to a boil over medium heat. Keep on fire for another 3 minutes.
    3. Drain the water and refill with fresh cold water. Cook the zest again, but this time for longer - half an hour after boiling, on low heat. It is advisable to press down the zest with something so that it does not float to the surface, but is completely covered with water.
    4. Now prepare the syrup. Pour 180 g of sugar into 300 ml of water. Bring to a boil over moderate heat, stirring.
    5. When the sugar is completely dissolved, dip the crusts into it. Cook for 1 hour, stirring.
    6. Place pieces of zest on parchment paper (or a baking sheet lightly greased with oil). They shouldn't touch. Let cool completely.
    7. Melt the chocolate and butter completely in a water bath.
    8. Roll the zest in the remaining sugar and dip into chocolate. Then place it again on parchment. After half an hour, put the crusts in the refrigerator. After 1-1.5 hours you can take them out and enjoy.

    Homemade grilling

    Ingredients:

    • 150 g sugar.
    • 300 g walnuts. Weights are for already chopped nuts.
    • 1 tbsp. lemon juice.
    • 50 ml of cold boiled water.
    • 2 tbsp. cognac

    How to make homemade sweets:

    1. Heat the nuts in a frying pan and chop them with a knife to make small pieces.
    2. Prepare the syrup. Mix sugar with water. Cook over low heat, stirring, until the syrup turns golden and thickens slightly. Add lemon juice and stir.
    3. Remove the pan from the heat. Add the nuts and stir until the nuts are evenly coated with the syrup.
    4. With your hands soaked in cold water, form small balls from the nuts in the syrup. Place them on parchment paper. Let it sit for half an hour so that the grilled meat cools and hardens.
    5. To prepare the glaze, melt the chocolate in a water bath. Add cognac and stir.
    6. Dip each ball into the glaze and then place it on paper again. Place the finished candies in the refrigerator for several hours so that the icing cools well.

    Candied watermelon rinds

    You can cook other fruits and berries in a similar way.

    Ingredients:

    • 500 g sugar.
    • 1 kg watermelon rinds.
    • 150 g powdered sugar.

    How to make homemade candy:

    1. Cut the rind off the watermelon. Cut off the dark outer layer and discard. You only need the inner one, light green. If you have doubts about the nitrate content in striped berries, first soak them in cold water for at least several hours. You can leave it on all night.
    2. Grind this layer into thin strips.
    3. Sprinkle the pieces with sugar and stir. Cover with something and let stand for 4 hours.
    4. During this time, juice should be released from the crusts. Drain it and boil with sugar for 10 minutes at moderate heat.
    5. Pour the resulting syrup over the crusts. Leave it overnight. Then drain the syrup 4 more times, boil it and pour over the strips.
    6. Boil the crusts together with the syrup until it thickens completely.
    7. Now line a baking sheet with parchment paper. Place the crusts on it. Place in the oven for 10 minutes, preheated to 180 degrees.
    8. Let the crusts cool, then roll in powdered sugar.

In the future, you can modify it by adding ingredients to your taste (fruit juice, dyes, coffee, citrus zest, etc.), but the base of the candies is always the same. The basic recipe is the recipe for the famous cockerel lollipops, there is nothing superfluous in it. True, market “cockerels” are often painted in bright colors using food coloring.

    Ingredients:

    • granulated sugar – 10 tbsp;
    • water – 10 tbsp;
    • vinegar - 1 tbsp. (preferably natural - apple or wine). It can be replaced with citric acid - 0.2 tsp;
    • vegetable oil (to grease the pan).

    Preparation

    Water, vinegar and sugar are mixed in a fireproof container (preferably in an enamel pan) and heated thoroughly. When the mixture becomes hot and the sugar begins to dissolve, reduce the heat and, stirring constantly, cook the syrup until golden brown. The cooking time depends on the amount of mixture in the pan - the larger the portion, the more time it will take to cook. From time to time, drop the syrup into a cup of cold water. As soon as the drop begins to harden, the lollipops are ready; you can pour them into a pre-greased mold. Don’t forget to insert the prepared sticks so that the lollipops have “legs.” You can buy ready-made sticks, or you can use matches, bamboo skewers or toothpicks (of course, the sharp edges should be trimmed). Cool the candies to room temperature, open the mold and enjoy.

    How to make colorful lollipops?

    To make unusual colorful candies, you will need to slightly change the basic caramel recipe.

    Ingredients:

    • granulated sugar – 8 tbsp;
    • berry or fruit juice without pulp - 3 tbsp;
    • lemon juice – 1 tsp;
    • cooking sugar (optional)

    Preparation

    Mix all ingredients and heat in a fireproof non-stick bowl, stirring constantly, until the sugar is completely dissolved and golden caramel forms. If you have added brightly colored juice, relying on the color of the caramel is not very reliable - check for doneness by dripping the caramel into cold water. As soon as the drop begins to solidify and not dissolve, the lollipops are ready (this is called the “ball test”). Add sprinkles to the finished caramel and pour into molds. Because the sugar and syrup juices have turned into caramel, the topping will not dissolve.

    If you have food coloring, you can add it, then you will be able to make green, blue, bright red candies. But keep in mind that the powder dye must be thoroughly mixed with water before heating so that the candies are evenly colored.

    Flavorings for candies can include citrus zest, coffee, rose or orange water, or synthetic food flavorings.

    How to make a lollipop mold?

    Authentic, antique lollipop molds are not easy to find these days. If you are the happy owner of just such a heavy metal form, congratulations. If not, don’t worry, finding an alternative to the classic form is not so difficult. Of course, you won’t be able to get three-dimensional animal figures, but who said that lollipops have to be exactly like that?

    If you pour the caramel mass onto a flat baking sheet in neat puddles and put a stick in each of them, you will get beautiful candy circles. By pouring caramel in puddles into a shaped silicone mold, you will get fancy candies of an original shape. Very often chocolate boxes (with molds) are used as a mold. Some people make candy by filling cookie sheets lined with caramel. As you can see, there are a lot of options. The main thing is not to forget to grease the mold so that the lollipops do not stick, and to ensure that the material of the mold is able to withstand the temperature of hot caramel without melting.
