Let's make a cake for March 8th with our own hands? And such a living, homemade, cozy pie! Without impossibly sweet and unappetizing mastic, and without cream roses made from vegetable cream with palm oil... And for those who just want to drink tea on this, which has long been just a women's day, and not on a holiday of feminists and lesbians. We've sorted out the ideological part, let's move on to the culinary part 😉

Since March 8 always falls during Lent, I offer a Lenten version of the eight. However, if you have a desire to bake a butter pie, nothing could be easier! You can take just the design idea or choose one from the simple yeast dough options:

In order to bake two small eights (each is roughly 4 servings), divide the amount of ingredients in all these recipes in half, since in each of them I mixed 1 kg (give or take) of flour. Here I used 500 grams.

I used blackcurrant jam as a filling. But any other option is possible, both rich and lean. I will focus on the latter.

5 ideas for lean sweet filling:

1. Apple.
Ingredients: 250-300 g apples; 2 tbsp. sugar (can be increased); 1 tsp cinnamon (you can do without it).
Preparation: Wash the apples, remove the skin, remove the core and seeds. Cut the apples into cubes or small slices. Place on the dough, sprinkle with sugar and cinnamon.

2. Berry.
Ingredients: 250 g of any berries (fresh or frozen); 2-4 tbsp. Sahara; 2 tbsp. starch (if the berries are frozen).
Preparation: Thaw the berries, drain the juice. Place the berries on the dough, sprinkle with sugar. If the berries are frozen, first sprinkle with starch so that it absorbs the berry juice that will be released during baking.

3. Pumpkin.
Ingredients: 200-250 g pumpkin (weight without peel and seeds); 2 tbsp. sugar (you can increase it or, on the contrary, remove it); 4 tbsp. raisins
Preparation: Grate the pumpkin on a medium grater, mix with sugar and washed raisins. If the raisins are dry/hard, steam them first.

4. Chocolate.
Ingredients: 200 g lean dark chocolate.
Preparation: Break the chocolate into pieces or smaller pieces. Scatter chocolate chips over the entire surface of the dough.

5. “Friendship” filling made from dried fruits.
Ingredients: 70-100 g prunes; 70-100 g dried apricots; 70-100 g raisins.
Preparation: Rinse dried fruits thoroughly. Pour boiling water for about 15 minutes if they are not very dry. Otherwise, keep covered with boiling water for about an hour. Can be steamed (softened by steam).

You can make eights with a savory filling of vegetables or mushrooms - decide what you want more! Well, now I’ll tell you in detail about how I prepared this jam pie 😉

For the test:

  • warm boiled water - 230 ml
  • dry yeast - 5-6 g (can be replaced with 25 g live)
  • salt - 0.5 tsp.
  • sunflower oil - 3 tbsp.
  • premium wheat flour - 500 g
  • sugar - to taste (I didn't add)

For the filling:

  • blackcurrant jam - 200-250 g

Work progress:

I sifted the flour and added dry yeast and salt to it. Stirred thoroughly.

If you want to knead a sweet dough, add sugar to the rest of the dry ingredients at the same stage.
If you use live yeast, then change the sequence - first dilute it in water, and then add flour, salt and sunflower oil.

I poured in warm water.

I kneaded the dough.

Added 2 tablespoons of sunflower oil.

I kneaded the ball of dough and brushed it with the remaining spoon of butter.
If the dough turns out sticky to your hands or, on the contrary, excessively dry, adjust by adding a little flour in the first case, and water in the second.

Place the dough in a warm place to rise (for 1-1.5 hours).
If you have time, you can lower it and wait for the dough to rise again.

Divided the dough into 2 parts.

I rolled each of them into a long and rather narrow layer. I got it measuring 50x13 cm.

I laid out the filling along the entire length in the center.

I made a tight pinch along the entire length of the “sausage”.

I brought the ends together and folded them into a figure eight, making the top a little smaller than the bottom. Transferred to a baking sheet greased with oil.

I baked each eight at 180"C for about 25 minutes.

I put the hot pie out of the heat on a festive platter! After a few minutes I cut it into pieces.

The Lenten Eight turned out light, tasty and aromatic thanks to the jam! With freshly brewed tea - very good! ;)

To prepare this pie you need butter, eggs, granulated sugar, salt, oranges or some kind of jam, almonds or any nuts, flour.

First make the filling. Grate three medium oranges along with the skin, remove the seeds to prevent bitterness. Grind the whole mass with 1.5 cups of granulated sugar (try it on your palm, it won’t be sweet, add more) and simmer over medium heat for 20 minutes until thick. Remove from heat and let cool.

In the meantime, prepare the dough. Mix together 250 grams of butter, 2 whole eggs (both white and yolk) and 2 yolks (without whites), 3/4 cup sugar and 1/4 teaspoon salt, then add 2 cups of flour. This dough is called shortbread dough, it is kneaded with a large amount of butter, so it must be made in a ventilated kitchen so that the temperature there does not exceed 20°, and it must be kneaded very quickly, 3-4 minutes. The dough should be plastic and flexible. Roll out the flatbread no thicker than 1 centimeter and bake on an iron sheet without a side to make it easier to remove. Shortbread dough is baked in a hot oven so that the butter does not have time to leak out, but is set by the heat along with flour, sugar and other things. After 10–15 minutes, the cake will turn pink, then remove it from the oven without removing it from the sheet, spread it with orange mixture, and return to the oven for 10–12 minutes.

Once cooled, garnish with thin orange slices and almonds or nuts and sprinkle with powdered sugar.

Instead of a pie, you can bake cookies. Prepare the same dough, divide it into four parts, put it in the refrigerator for 30 minutes. Using a small glass, squeeze out round cookies, quickly place them on a baking sheet and immediately put them in the oven. Cookies are baked for 5–6 minutes. Once cooled slightly, remove from the baking sheet. After 20 minutes, dip the cooled cookies into powdered sugar (grind 3-4 pieces of sugar in a mortar).

Apple Pie

Ingredients:

  • Flour - 350-380 grams
  • Baking powder - 2 teaspoons
  • Sour cream 25-30% - 125 grams
  • Butter 82% - 150 grams

For filling:

  • Egg - 1 large or 2 small
  • Sour cream 25-30% fat - 350-400 grams
  • Sugar - 200-250 grams
  • Flour - 3 tablespoons
  • Apples - 5 pieces

Take flour, sift through a sieve, add 2 teaspoons of baking powder and mix everything thoroughly. Instead of baking powder, you can take 0.5 teaspoon of slaked soda, but add it not to flour, but to sour cream.

Grind butter (350 grams) at room temperature with flour. We will add the remaining 30 grams, if necessary, in small parts at the very end of the kneading. Again, if the dough turns out runny.

Add half a glass of sour cream to the crumbs, knead the dough. It should resemble melted plasticine and should more or less roll out. You shouldn’t fuss for too long, as the butter will melt and the dough will become softer. We put it in the refrigerator.

It is worth noting that there is no sugar in the dough and there shouldn’t be. Don’t worry about this, the filling will add sweetness to the pie.

Filling: Beat all the above ingredients until smooth in a blender or using a mixer. If you have neither one nor the other, you can use a whisk or fork.

It must be said that sour cream should be fat. Ideally, if you find 30%. However, if you have only 15% sour cream, the problem can be solved by adding 4 tablespoons of flour instead of 3.

Apples (approx. 1 kg.) Wash, cut in half and cut into small slices.
Take the dough out of the refrigerator and roll it out. It is advisable to roll out without flour. The thickness of the dough should be 5-7mm. Transfer to a mold (23-26 cm in diameter), rolling it onto a rolling pin. We first form the bottom and then the sides of the pie.

Pierce the dough with a fork and sprinkle with sugar and cinnamon if desired. Fill with filling and arrange apple slices. Place the pie in an oven preheated to 180 degrees for 40-60 minutes, depending on the capacity of the oven. After we take the pie out of the oven, leave it alone for 2-3, allowing the filling to completely set.

Curd pie with plums

Ingredients:

  • Sugar – 1 cup
  • Butter – 100 grams
  • Chicken egg – 2 pieces
  • Soft cottage cheese – 250 grams
  • Red plums – 200 grains
  • Flour – 1.5 cups
  • Baking powder – 10 grams

Beat soft butter with sugar, then add baking powder and flour. The dough should be crumbly, like crumbs. For the filling, beat 0.5 cups of sugar and 2 eggs with a mixer, and then add cottage cheese to this mixture. Beat everything until smooth and fluffy. If your cottage cheese is quite grainy, then it is best to beat it separately with a blender to a paste.

Pour half of the dough into a mold (diameter 20-25 cm), and evenly distribute our curd paste on top. Then we take the berries and arrange them beautifully, lightly pressing them into the cottage cheese. Instead of plums, you can take other berries and fruits to suit your taste. For example, apricots, apples, pears, etc. Cover everything with the remaining dough on top.

Place in the oven, preheated to 180 degrees for 25 - 40 minutes (depending on the capacity of the oven), until the pie is golden brown. The prepared pie can be sprinkled with nuts, for example almonds, to suit your taste.

Zebra Pie

Ingredients:

  • Sugar – 300 grams
  • Flour – 250grams
  • Egg – 4 pieces
  • Sour cream – 200 ml.
  • Butter – 100 ml.
  • Cocoa powder – 2 tablespoons
  • Soda – 1 teaspoon

Separately mix flour and soda. Beat the eggs and sugar separately from the flour mixture for at least 5 minutes at maximum mixer speed. Add sour cream and butter at room temperature. Mix everything at low speed. Add flour and soda and mix again with a mixer at low speed.

Now the resulting dough needs to be cut into 2 equal parts. Add cocoa powder to one part and mix with a mixer at low speed until smooth. Cover a mold (20-25 cm) with parchment and grease it with oil. Spread 2 tsp one at a time. white dough and 2 tsp. chocolate, one layer in the center of the other. Make a design on the surface with a skewer, if desired.
Place the cake in an oven preheated to 180 degrees and bake for 40 to 60 minutes, depending on the capabilities of the oven. Readiness is checked with a wooden skewer. You need to pierce the cake and if the skewer is clean, the cake is ready.

Curd pie with apricots

Ingredients:

  • Flour – 200 grams
  • Butter – 100 grams
  • Sugar – 50 grams
  • Egg – 1 piece
  • Baking powder – 1 teaspoon

For the filling:

  • Cottage cheese – 400 grams
  • Egg – 2 pieces
  • Sugar – 120 grams
  • Sour cream – 200 grams
  • Starch – 2 tablespoons
  • Juice of half a lemon
  • Vanilla sugar – 10 grams
  • Apricots – 10-12 pieces

Grind soft butter with sugar. Add the egg and mix everything. Sift the flour through a sieve with baking powder and add it in parts to the rest of the ingredients, mixing well each time. You need to make a ball out of the dough and place it in the refrigerator for half an hour. Then we transfer the dough into a mold (20-25cm) and form high sides.

Beat cottage cheese, sour cream, sugar, vanilla sugar, eggs, starch and juice of half a lemon until smooth and pour the resulting curd mass into the dough. Carefully place the apricot halves on top. If the apricots are fresh, then you need to sprinkle them with sugar first so that they are not sour.
Place the pie in an oven preheated to 180 degrees and bake for 40 to 60 minutes, depending on the capabilities of the oven.

Strawberry Pie

Ingredients:

  • Flour - 200 grams
  • Kefir - 100 grams
  • Sugar - 200 grams
  • Egg - 1 piece
  • Baking powder - 1 teaspoon
  • Butter - 6 tablespoons
  • Vanilla extract - 1 teaspoon
  • Strawberries - 100 grams

First, mix the flour with sugar and baking powder. Add soft butter to our flour mixture and knead everything with your hands. Then add a chicken egg, kefir and vanilla extract to the dough. Mix everything until smooth, and then put everything in a baking dish.
We beautifully lay strawberries on top and bake in an oven preheated to 180 degrees for 15-30 minutes (depending on the capabilities of the oven) until golden brown.
If desired, the finished pie can be decorated with powdered sugar.

Ingredients:

  • Flour - 300 g
  • Yeast - 0.5 sachet
  • Milk – 150 ml
  • Egg - 1 pc.
  • Butter - 50 g
  • Salt - a pinch
  • Onions - 750 g
  • Bacon – 250 g
  • Sour cream – 250 g
  • Milk (for filling) - 125 ml
  • Egg (for filling) - 3 pcs.
  • Pepper

  1. Mix all the ingredients for the dough (flour, yeast, egg, butter, milk), leave to rise for 60-90 minutes.
  2. Cut the onion into half rings.
  3. Cut the bacon into strips and fry in a dry frying pan for 1 minute. Add onion to it and fry everything together for another 3-4 minutes.
  4. Using a whisk, mix eggs, sour cream, milk, salt and pepper.
  5. Roll out the finished dough, place it on a baking sheet, pierce it with a fork to allow air to flow under the dough, and make “sides” around the perimeter of the baking sheet.
  6. Place fried bacon and onions evenly in the resulting form and pour everything with the resulting mixture of eggs, sour cream, and milk. Tuck the “sides” inside the mold.
  7. Preheat the oven to 160 degrees and bake the cake in convection mode for 45 minutes.

French apple pie

For the test:

  • Egg - 1 pc.
  • Flour - 120 g
  • Butter - 50 g
  • Sugar - 50 g

For the filling:

  • Apples (or plums, pears, peaches) - 400 g
  • Ground almonds - 100 g
  • Egg - 2 pcs.
  • Butter - 100 g
  • Sugar - 100 g
  • Flour - 80 g

  1. For the dough, grind sugar and butter, add egg and beat. Add flour and knead the dough. Place it in a plastic bag and put it in the refrigerator for 15-20 minutes.
  2. For the filling, beat eggs with sugar and butter, add ground almonds, flour and knead until smooth.
  3. Cut the fruit into cubes.
  4. Roll out the dough on a sheet of baking paper to a thickness of 3 mm and place in a baking dish. Bake at 180 degrees for 15 minutes.
  5. Remove the crust from the oven and cool completely on a wire rack.
  6. Place the filling on the cooled crust, smooth it out, and add the fruit. Bake for 20 minutes at 180 degrees.
