  4. Gradually we begin to add 2/3 of the sifted flour and salt (be sure to sift the flour twice through a fine sieve - this is another important condition!)
  5. Again, knead everything thoroughly, lumps in puff pastry are taboo!
  6. Sprinkle the work surface with flour.
  7. Place the thoroughly kneaded dough on a work surface, add the remaining flour and knead into a soft dough. The dough should not stick to your hands. Knead the dough for about 5 minutes.
  8. Wrap the dough in cling film or cellophane and place it in the refrigerator for 15 minutes.
  9. Our dough has cooled, let's start rolling it out. Roll out the chilled dough to a thickness of no more than 1 centimeter.
  10. Grease the rolled out layer with half the butter.
  11. Then we need to fold the dough layer in three, i.e. shift three times.
