Measure the sesame seeds into a clean, dry frying pan and, stirring constantly, fry over medium heat for 4-5 minutes until golden brown. Just don’t try to save these 5 minutes by buying ready-made fried sesame seeds - it’s not at all “the same in taste,” believe me.

Cool the roasted sesame seeds for 2-3 minutes.

Then place the grains in a blender bowl and grind until fine crumbs.

Add soy sauce, sugar and sesame oil. And also to choose from: 3 tbsp. vegetable oil or 4-5 tbsp. mayonnaise, depending on the version of sauce you choose. Beat for another 30 seconds.

Add rice vinegar to taste. The standard portion of vinegar with this number of ingredients is 2-3 tbsp. For the first preparation, it is better to start by adding 1 tbsp. vinegar and increase its amount gradually, adding in small portions and tasting the sauce at each stage.

Whisk the sauce for another 20-30 seconds. If you wish, you can make the consistency of the sauce a little more liquid - you can add a little more oil, mayonnaise or drinking water.

The sauce can be served immediately, and leftovers, if necessary, can be stored in the refrigerator in an airtight container. In this case, the container with the sauce should be shaken thoroughly before use.
