Huangjin Yujuan, or Golden squid rings, is a popular snack in Chinese home cooking. It is simple, has an attractive shape and color, is easy to prepare, and will cost the home budget very little. “Golden squid rings” are enjoyed by both adults and children. This snack goes well with various types of drinks.

INGREDIENTS:
medium-sized squids - 2 pcs.,

Prepare squid carcasses: if they are fresh and uncleaned, remove skin and entrails, remove dorsal cartilage and other excess. If the ice cream is defrosted at room temperature, rinsed and cut into strips 1 cm wide with transverse cuts, you will get squid rings. Marinate the resulting rings in a mixture of light soy sauce, Shaoxing wine and ground black pepper for 20 minutes.


Prepare three containers - pour cornstarch into one, breadcrumbs into another, and lightly beat the egg in the third. It is better to cook squid rings in batches. First, roll the squid ring in cornstarch, then dip it in the egg mixture.


Then roll in breadcrumbs. This is convenient to do with chopsticks. At first it will be unusual, but then, when you get used to it, you will see that it is convenient. Place the rings prepared for frying on a cutting board or plate.
Heat oil in a wok over medium heat and deep-fry the breaded squid rings until golden brown (about a minute).


Remove the finished squid rings and place on a paper towel. Repeat the procedure with the remaining rings.

Serve the finished squid rings hot and eat them, dipping them in various dip sauces. Almost any dipping sauce will work with this appetizer.


How to cook squid simple and fast? Fry it in rings in breadcrumbs. This would be a great hot snack or even a light dinner. You can serve with green salad leaves or any vegetable salad.

If you bought frozen squid, defrost it “without temperature shock”, that is, transfer it from the freezer to the refrigerator overnight, the next day, if necessary, let it stand for another hour at room temperature - and you can cook. We will need peeled squid rings (you can buy frozen rings right away - this is the easiest way for this dish). If you bought the squid carcass, then after defrosting, pour boiling water over the carcass for a couple of minutes (no more!) - the film will curl up and “move away” from the meat, after which you can easily remove it under cold running water. After this, remove the chord (something similar to the spine) and cut the squid into rings about 1 centimeter wide. Next, let's start cooking.

Need to:

  • Squid rings – 0.5 kilograms
  • Lemon – quarter of 1 lemon (more precisely, we will need lemon juice from a quarter of a lemon)
  • Soy sauce – 1 tablespoon (can be replaced with 0.5 teaspoon table salt)
  • Seafood seasoning (ready-made spices) – 0.5-1 teaspoon
  • Chicken eggs – 3 pieces
  • Wheat flour – 3 heaped tablespoons
  • Breadcrumbs (white, from premium bread crumbs) – 4 heaped tablespoons
  • Vegetable oil - approximately 0.5 to 1 cup (depending on the diameter of your frying pan)

Preparation:

Rinse the squid rings (thawed and peeled) with cold running water, place in a colander and let the water drain.

Place the squid rings in a bowl or ladle, pour in boiling water (literally for 5-7 seconds, you only have time to lightly mix the rings) and immediately drain the boiling water, throwing the rings into a colander. This procedure is necessary so that the squid rings “keep their shape” and do not flatten.

Next we need to lightly “marinate” the rings. Squeeze the juice of a quarter of a lemon on them, pour soy sauce (or just salt), sprinkle with spices (seafood seasoning), and stir.

Leave the squid rings marinated in this way to stand for 20-30 minutes.

Take three small bowls or just deep plates. In one of them, beat the eggs, mixing the whites and yolks, just with a fork, there is no need to beat too much. Place flour in another bowl and breadcrumbs in a third.

We put all this closer to the stove. Pour vegetable oil into a deep frying pan (we have already written about the required amount in the recipe for squid rings in batter, you can see this) and let the oil get very hot.

First roll the squid rings (one at a time) in flour, then dip in beaten eggs and roll in breadcrumbs - and place in a frying pan ( watch our video recipe!). We do this as quickly as possible. We do not lay the rings close together, but at some distance from each other. Fry the rings on medium-high heat, first on one side until golden brown, 1.5-2 minutes, no more!

Then we turn the squid rings over and fry them on the other side, also until golden brown and for about the same amount of time (perhaps a little less). Keep track of the time! If you overcook the squid, it will be rubbery, tough and tasteless.

Once again, having ordered crispy breaded squid rings in a cafe and paying a decent amount for a small portion, I decided to try cooking them at home. Fortunately, these sea creatures are inexpensive and can be found in almost any grocery store. If you wish, you can even buy them already peeled and cut into rings, but they will cost more.

To be honest, I was always afraid to deep-fry anything: the batter would spread, or the oil would start to bubble and shoot. And in this regard, a multi-layer breading of starch, eggs and breadcrumbs is ideal. With it you can avoid all the troubles, the crust turns out smooth and crispy. So I highly recommend preparing breaded squid rings, it turns out no worse than professional chefs.

Ingredients

How to cook breaded squid rings

  1. I am preparing everything necessary. I defrost the squid and then put it in boiling water for 30 seconds. This simple technique helps you easily remove film from sea life. Under the influence of temperature, they quickly curl up and separate from the meat very easily; all that remains is to rinse the carcasses.

  2. I cut it into rings 7-10 mm thick.

  3. I prepare everything for breading. Pour breadcrumbs, salt, garlic and a mixture of peppers into one plate and mix. In the other - starch. In the third, I break the egg with a fork.

  4. Now you can get started. I first coat the squid in cornstarch.

  5. Then I dip it in the egg.

  6. And finally, I sprinkle it with breadcrumbs.

  7. Place the breaded squid rings on a board or plate.

  8. I pour vegetable oil into a saucepan or deep fryer and set it to heat on gas. After 1-2 minutes, I try to lower the squid, if the oil begins to sizzle and bubbles appear, you can proceed. I lay out the rings a few at a time and fry for a couple of minutes. The surface should become golden.

  9. I do this with all squid.

Serve with lemon. Each guest can optionally top the dish with freshly squeezed juice.

Note:

  • squid tails can also be breaded and fried, after cutting into strips;
  • Instead of corn starch, you can use potato starch; in extreme cases, roll it in wheat flour.

Let's start preparing the dish with batter. It is the simplest, but the most delicious, as we think. Place the flour in a container, add salt and season with a mixture of peppers.

Break an egg or two into flour.

Now you need to knead the dough until it has the consistency of liquid sour cream, but so that the mass does not flow, but lingers on the squids. Leave the resulting batter in a warm place for 15 minutes.

At this time, heat a container with vegetable oil. We recommend that you pay special attention to this point in the instructions. We use a clean and dry container for frying - be it a frying pan, a saucepan or a saucepan with high sides. Any contact of water on the frying surface with boiling oil causes it to explode. Dip the squid rings well into the batter and very carefully but quickly transfer them to the frying pan. The oil should be boiling a little by this time.
