To make sauce for meatballs, you don’t need any special culinary skills or expensive products. Meatballs are best served with gravy with a slight sourness, so they are often prepared from a mixture of sour cream and tomato paste.

To prepare the sauce, you should not use fatty sour cream; a product with a fat content of 15-20% is quite suitable. If you use rich homemade sour cream, the sauce will be too high in calories.

Tomato paste should be chosen with a natural composition without dyes. You can use vegetables to complement the sauce; they will add the necessary juiciness and thickness. To make the sauce tastier, it is recommended to fry the vegetables first. But in this case, the gravy will be more high in calories.

To add flavor, you can add dry herbs, herbs, and spices. You can add fresh herbs. The sauce will acquire an exotic taste if you add citrus zest and juice to it. You can also prepare tomato-sour cream sauces with the addition of mushrooms, pickled cucumbers, and cheese.

Interesting facts: the word “sour cream” has a common root with the verb “sweep.” This is due to the method of preparation; cream that floats to the surface of the milk is carefully swept off the surface.

Simple tomato and sour cream sauce for meatballs

This is the simplest version of the sauce; it is made from sour cream, tomato paste and flour. This sauce is used for baking. The prepared meatballs are poured with the prepared sauce and baked in the oven. As a result, the dish is soaked in the sauce, and it turns out very tasty and juicy. The remaining gravy at the bottom of the pan can be poured over the side dish. Moreover, almost any side dish will suit this dish.

  • 2 tablespoons sour cream;
  • 1 tablespoon of tomato paste;
  • 2 tablespoons flour;
  • salt, pepper to taste;
  • 1 glass of water.

Pour flour into a bowl, add sour cream, stir thoroughly so that no lumps form. Add tomato paste there and gradually pour in vegetable oil. When introducing vegetable oil, you need to constantly stir the mass with a whisk or spoon.

Advice! If desired, you can use other spices. For example, you can add dry Italian herbs mixture to the sauce or simply add dry basil and oregano.

Dilute the prepared mixture with water and mix again very thoroughly. Salt and add spices to taste. Pour the prepared sauce over the meatballs placed in the pan and bake. If you need to make a sauce for already prepared meatballs, then pour the prepared mixture into a saucepan, bring to a boil and cook, stirring for 5-7 minutes. Pour the prepared sauce over the finished dish.

Pink sauce for meatballs with onions

Pink sauce is perfect for meatballs; it goes well with different types of side dishes.

  • 3 cups broth or water;
  • 2 tablespoons sour cream;
  • 1 onion;
  • 2 tablespoons flour;
  • 1 tablespoon of sugar (without a slide);
  • 2 tablespoons vegetable oil;
  • salt, pepper mixture to taste.

Peel the onion and chop it very finely. Heat the oil in a frying pan and fry the onion. There is no need to fry it too much, just bring it to a translucent state, sprinkle the onion with flour and mix well so that all the flour is saturated with oil.

We dilute tomato paste and sour cream in broth or water, pour this mixture in a thin stream into the frying pan, stirring gently with a whisk. Salt the sauce, add sugar and spices. Let it simmer for 5-7 minutes. The sauce can be used for baking meatballs; it can also be poured over the finished dish.

Tomato-sour cream sauce with mushrooms

Mushroom sauce prepared with sour cream and tomato paste is very tasty. It is suitable not only for meatballs, but also for other dishes - cutlets, chops. Even ordinary fried or boiled potatoes, poured with this gravy, will become much tastier.

  • 200 gr. champignons;
  • 1 onion;
  • 150 ml sour cream;
  • 0.5 tablespoon of tomato paste;
  • 50 gr. dill;
  • 0.5 teaspoon salt;
  • 1 tablespoon vegetable oil for frying.

Peel the onion and chop it very finely. We wash the champignons and chop them into small pieces.

Pour oil into a frying pan, as soon as it warms up, fry the onion in it. When it becomes translucent, add the champignons and continue cooking, stirring occasionally.

After 10 minutes, add sour cream and tomato paste, mix and leave to simmer for about another 10 minutes. Add finely chopped dill and leave on the stove for a couple more minutes. The sauce is ready, but to make it more homogeneous, you can beat it with a blender.

Sauce for chicken meatballs with vegetables and cheese

An excellent sauce for chicken meatballs is gravy with vegetables, sour cream, tomato and cheese. It is recommended to use processed cheese; the sauce is especially successful if you use cheeses marked “for soup”, since this product goes well in hot gravy.

  • 1 onion;
  • 1 carrot;
  • 2 cloves of garlic;
  • 250 gr. sour cream;
  • 2 tablespoons of tomato paste;
  • 50 gr. processed cheese;
  • salt, pepper to taste;
  • oil for frying.

Finely chop the peeled onions and garlic, three carrots on a fine grater. Pour oil into a frying pan and fry the prepared vegetables in it. Fry for 15 minutes, stirring occasionally, then add 2-3 tablespoons of water, cover with a lid and simmer over very low heat until completely soft.

Separately mix sour cream and tomato paste, add this mixture to the prepared vegetables. Stir and add water to achieve the desired thickness of the sauce. Bring to a boil and add processed cheese cut into small pieces, stir until the cheese is completely dissolved. Bring the sauce to the desired taste by adding seasonings. If desired, you can beat the finished sauce in a blender to make it more homogeneous.

To prepare meatballs in sour cream and tomato sauce in the oven, prepare the necessary ingredients from the list. The rice must first be cooked until half cooked and allowed to cool.

Place the minced meat in a deep bowl, add a little pepper and salt, add half of the herbs. You can use any herbs you like.
