  1. Cut the stalk from a head of white cabbage, boil it in a saucepan and add salt to the water. Place a head of cabbage in a pan of boiling water and boil it for 2-3 minutes. Remove the pan from the heat and leave for 30-40 minutes until almost completely cooled.
  2. Meanwhile, prepare the minced chicken filling for the cabbage rolls. Rinse the rice and pour into a saucepan with boiling, salted water (200-250 ml is enough). Cook the rice for about 25 minutes until cooked and water is completely absorbed. Remove the pan from the heat and cover with a lid.
  3. Peel the carrots and grate on a coarse grater. Also peel and grate the celery root. Peel the onion and cut into small pieces. Pour a couple of tablespoons of vegetable oil into the frying pan and put on fire.
  4. Place the onion in a frying pan with heated oil and fry it over moderate heat until golden brown for 2-3 minutes. Then add carrots and celery and mix. Cook the chicken cabbage rolls for about 5 minutes over medium heat, stirring.
  5. Wash the greens, dry and chop. Combine the minced chicken in a bowl with rice, herbs and half of the roast, mix thoroughly. Salt and pepper the chicken stuffing for cabbage rolls to taste (you can add a little salt).
  6. Remove the cabbage from the water and dry it with a towel. Disassemble the head of cabbage into leaves. Place the filling of minced chicken, rice and vegetables (about 1-2 tbsp) in the center of the cabbage leaf and wrap it in the leaf.

  8. If you replace tomato paste with tomatoes, make cross-shaped cuts on them and place them in a pan of boiling water for a couple of minutes. Then transfer them with a slotted spoon to a container of cold water and leave to cool for a few minutes.
  9. Peel the cooled tomatoes and mash thoroughly with a fork or in a blender. Combine tomato puree with 100-150 ml of water and stir. Pour the resulting mixture over the cabbage rolls and vegetables.
  10. Place the pan with cabbage rolls on the fire and bring to a boil. Immediately after boiling, reduce the heat and cover the pan with a lid. Cook cabbage rolls with minced chicken over low heat for 1 hour.
  11. If you want to cook chicken cabbage rolls in the oven, you need to place a heat-resistant pan under a lid with the cabbage rolls in an oven preheated to 180C. Cook cabbage rolls with minced chicken in the oven for about 1 hour.
  12. Remove the pan from the oven/hot and leave covered for 15 minutes. Remove the lid and place the cabbage rolls on plates and serve hot. Bon appetit!

Preparation

Boil the rice until half cooked and then drain in a colander. Cut the onion into small cubes and grate the carrots. Pour about a tablespoon of vegetable oil into a frying pan and fry the onions and carrots. In a deep bowl, mix the minced meat, rice and half the roast. We separate the cabbage leaf by leaf. Ingredients:

  • white cabbage – 1.5 kg;
  • minced chicken – 600 g;
  • carrots – 1 pc.;
  • onion – 1 pc.;
  • boiled rice – 250 g;
  • tomato juice – 700 ml;
  • cilantro – 25 g;
  • parsley – 25 g;
  • water – 200 ml;
  • sugar – 1 tbsp. spoon.

Preparation

Place the washed head of cabbage into a pan of boiling water. Boil for 7-10 minutes until the leaves come off easily. Meanwhile, we prepare the filling: grate the carrots on a coarse grater and chop the onion. Sauté vegetables in vegetable oil. Boil the rice until almost done in salted water. Mix the minced chicken with carrots, onions and rice, and add chopped cilantro and parsley. Cut off the seals in the cabbage leaves.

Place the filling on the edge of the sheet and form a cabbage roll. Shred the remaining cabbage into thin strips and place it on the bottom of the pan where we will stew the cabbage rolls. Place cabbage rolls on top. Prepare the filling: mix tomato juice (preferably homemade), mix with water, add sugar and salt to taste. Today we will talk about a wonderful and very homemade dish, cabbage rolls with chicken. Why cabbage rolls with chicken? Why not :) Everyone has eaten cabbage rolls with pork or beef, but not everyone can boast that they have tried cabbage rolls with chicken.

In fact, cabbage rolls with chicken are practically no different from the classic ones, except that you can detect a slight difference in the taste of the meat. But in combination with the rest of the filling ingredients, this taste difference becomes subtle. The color of the filling of cabbage rolls is slightly different; with chicken it has a more delicate color than with the same pork.

For myself, I have identified two main advantages of cabbage rolls with chicken over the classic version of the dish. Firstly, this is a lower price for the same meat. After all, chicken is much cheaper than beef. I prepared the minced meat for these cabbage rolls from chicken fillet, the price of which is at least two times lower than the price of good beef. I do not advocate saving on food, but I am for healthy rationalism. Secondly, with chicken, cabbage rolls are easier to digest. You could say it turns out to be a dietary version of the dish.

In general, I can say that cabbage rolls with chicken are a worthy dish that, although it takes a relatively long time to prepare, can bring great pleasure to those for whom it is intended, that is, you and your loved ones. This dish is a holiday. Stuffed cabbage rolls, of course, are not cooked every day, but once a month you can easily afford such an activity. You can also cheat and prepare a double portion of cabbage rolls with chicken, then freeze half and use it later when you are lazy or don’t have time to cook.

Prepare minced chicken. I have minced chicken fillet, the total weight of which is 500 g.


Since the filling for cabbage rolls, in addition to minced meat, consists of several other ingredients, you should also deal with them. Pour half a glass of rice into a glass of water and cook over low heat under a closed lid until the liquid is completely absorbed by the rice. We don't salt the rice.

Peel the carrots and grate them on a fine grater. Fry for 3-4 minutes with the addition of a small amount of sunflower oil.


We also peel the onions. Grind it finely (I do this using a blender). Place minced chicken, boiled rice, fried carrots and onions in one large container.


Add salt and ground black pepper and mix everything thoroughly. The filling for cabbage rolls with chicken is ready and will be waiting in the wings.


Now let's take care of the cabbage. A head of cabbage should be boiled in a pan of water. During the cooking process, carefully remove the cabbage leaves one by one. This will be easier to do if you cut the base of the head of cabbage around the growing point in advance.


We cut the first large cabbage leaves lengthwise into two parts, leave the rest whole, but cut off the thickenings and the base of the leaf.

We take portions of the filling (about 1.5 - 2 tablespoons per serving) and wrap them in cabbage leaves. There are many ways to wrap the filling in a cabbage leaf. The method I use is shown step by step in the following photo.


After all the cabbage leaves have received their portion of the filling, the cabbage rolls should be fried. Very often this step is ignored, but not by me. Thanks to this frying, the cabbage in the prepared cabbage rolls becomes even tastier and more tender. Frying time: 3-4 minutes on each side over medium heat.

If you decide to freeze some of the cabbage rolls, then you should do it after this step. Then next time, when you take them out of the freezer, all you have to do is bake the cabbage rolls in sauce in the oven or simmer them in a frying pan in the same tomato sauce.


Place the fried cabbage rolls tightly in a roasting pan (I cooked in a saucepan). Fill them with water and add 3 tablespoons of tomato paste (small heaped), a tablespoon of sugar and 0.3 tablespoon of salt to the water, add a little ground black pepper. Cover the frying pan with a lid and stir the water and pasta in a circular motion. Or we just do it in advance (mix water with pasta, salt, sugar and pepper, and then pour this sauce over the cabbage rolls).

They are revered in almost all families and are prepared in different ways, changing the composition of the products, thereby creating a completely new taste and aroma. Usually the filling is minced pork and beef, mixed with various vegetables, rice, spices, and herbs.
However, stuffed cabbage rolls made from minced chicken are no less tasty, and most importantly tender and very light.

Ingredients:

  • 1 fork white cabbage;
  • tomato paste - 220 g;
  • 55 g sour cream;
  • 45 g of salt, black pepper and any spice for vegetable dishes;
  • 65 ml refined oil;
  • parsley, dill - 3 sprigs each.

For minced meat:

  • 5 chicken legs;
  • 1 carrot;
  • 1 onion;
  • 325 g rice.

Step-by-step recipe for cabbage rolls with minced chicken

Prepare the minced meat: wash the chicken legs, separate the skin, cut out the pulp, and grind it in a meat grinder. The carrots and onions are freed from the peel (husk), the onion is cut into crumbs, the carrots are finely grated and put into minced meat. The rice is washed, boiled, washed again in a colander and transferred to minced meat, everything is thoroughly kneaded.

The cabbage is separated into leaves, washed, placed in boiling salted water and boiled for 10 minutes.

Add a little tomato to the minced meat, add some salt, season with pepper and spices, and mix everything thoroughly.

The cabbage leaves are laid out one by one on a cutting board, about a tablespoon of minced meat is placed in the middle, rolled into an envelope and placed in a deep cast-iron container.

And instead of rice cereal, oatmeal is used, which gives the product a delicate and soft consistency.

Ingredients:

  • 465 g prepared minced chicken;
  • 235 g white cabbage;
  • 110 g oatmeal;
  • egg - 1 pc.;
  • 2 carrots;
  • onion - 1 pc.;
  • black pepper, salt - 20 g;
  • 105 ml water;
  • tomato paste - 65 g;
  • 60 g sour cream;
  • vegetable oil - 80 ml.

How to cook cabbage rolls with minced chicken

The cabbage is rinsed, cut into small pieces and ground in a meat grinder.

The remaining vegetables are peeled, also ground in a meat grinder and combined with cabbage, allowed to stand for a while to release juice.

Squeeze the juice from the vegetables and pour it over the oatmeal, set aside for a few minutes to swell.

The vegetables, squeezed from the juice, are placed in the minced meat, an egg is broken, salt and pepper are added and everything is mixed thoroughly.

Spread the flakes and mix again until smooth and tender.

The products are formed in the form of elongated cutlets.

Grease the multicooker container with vegetable oil, lay out the formed cabbage rolls, add tomato paste, adjust the device to the “stewing” program, time 30 minutes.

Ingredients:

  • 3 small heads of Chinese cabbage;
  • 655 g minced chicken;
  • 165 g cream with any percentage of fat content;
  • 1 egg;
  • 220 g sour cream;
  • 1 carrot;
  • 1 onion;
  • 85 g rice cereal;
  • tomato paste - 60 g;
  • 55 ml refined oil;
  • 60 g of any seasoning and black pepper;
  • 20 g salt.

Step by step recipe

The heads of cabbage are washed, the stalk is cut off, the cabbage itself is divided into leaves, choosing only medium-sized leaves, since it is difficult to wrap the filling in narrow ones.

Fill a metal container with water a little more than half, bring to a boil over medium heat, remove from the stove and place leaves in the pan, leave for 4 minutes, remove and cool.

The washed rice is boiled in salted water until half cooked and washed in a colander.

Minced chicken is mixed with egg, cream, salt, pepper and spices, kneaded well until smooth.

The leaves are laid out on the table in a row, a small amount of minced meat is placed in the center of each, and wrapped in an envelope.

Prepare the sauce: the onion, freed from the husk, is chopped into crumbs, the carrots are freed from impurities, grated, and sautéed. Add tomato to the vegetables, salt, pepper and simmer for several minutes over low heat. Add sour cream to the sauce, stir well and boil a little more. Sometimes products with chicken meat turn out too dry, especially if chicken breast is used to prepare minced meat. To give them juiciness, you can add not fresh vegetables, but fried ones.

  • 2 carrots;
  • 2 onions;
  • 90 ml vegetable oil;
  • black pepper, salt - 15 g each.

For filling:

  • tomato paste - 545 g;
  • 1 carrot;
  • 1 onion;
  • 35 ml vegetable oil;
  • 5 allspice peas;
  • sugar - 40 g;
  • 35 g salt;
  • parsley, dill - 4 sprigs each.

How to cook

The cabbage is freed from contaminated and spoiled leaves, the stalk is carefully cut out, placed in a container with boiling water and cooked for 9 minutes.

Remove the cabbage from the water, slowly separate the leaves, cut out the rough parts or beat them with a mallet.

The chicken is ground in a meat grinder.

Peel the carrots and onions, chop the onion with a knife, grate the carrots and sauté.

The washed rice is boiled in slightly salted water, washed and placed in minced meat.

Ingredients:

  • a small fork of white cabbage;
  • 570 g chicken breast pulp;
  • 125 g rice;
  • 3 small onions;
  • 45 ml sunflower oil.

For the sauce:

  • 30 g tomato paste;
  • 330 ml broth;
  • 30 g chicken seasoning;
  • 40 g flour;
  • black pepper, salt - 55 g each;
  • dill, parsley - 5 branches each.

Separate clean leaves, cut out rough veins, place in hot water and boil over a small flame for 4 minutes. A few leaves are ground in a meat grinder, and the rest are left to form cabbage rolls.
