If you live in a private house or have a warm cottage, then you can cook barbecue at any time. But residents of city apartments have the opportunity to fry meat on coals only during picnics. However, if a trip to nature is not possible, then you can fry the barbecue in the oven on skewers. This dish is very tasty, juicy and fragrant.

  • 500 gr. chicken hearts;
  • 150 gr. onion;
  • 4 tablespoons of ketchup;
  • 1 teaspoon sugar (optional)
  • 2-3 tablespoons of vegetable oil;
  • spices and salt to taste.

If frozen chicken hearts are bought, then they must first be thawed. You need to defrost slowly, ideally, you need to get the package from the freezer and leave it in the refrigerator for 10-12 hours. During this time, the meat should thaw.

We clean the hearts, wash them and dry them. Put in a bowl. Cut the onion into half rings, salt it and knead it with your hands so that the juice stands out. Mix with tomato sauce. If the sauce is sour, you can add sugar. Pour spices into the tomato-onion mixture to taste.

For example, you can use garlic powder, dry aromatic herbs, a mixture of pepper. Add vegetable oil, mix. Add the prepared marinade to the hearts and mix. Leave at room temperature for 1 hour or in the refrigerator for 3-4 hours.

Thread the hearts onto wooden skewers. Put the onion from the marinade into the form or on a baking sheet, lay the prepared kebabs on top. We put the baking sheet in the oven, heated to 200 degrees.

After 15 minutes, check for readiness. Clear juice should flow from the cut heart. If blood is released, then let the kebab reach readiness in the oven for a few more minutes. But do not keep too long, so as not to overdry.

Original chicken skewers in batter

Baked in batter is an original and tasty dish.

  • 800 gr. chicken fillet;
  • 4 tablespoons of soy sauce;
  • 1 tablespoon balsamic vinegar;
  • 2 tablespoons of vegetable oil;
  • 3 eggs;
  • 125 gr. wheat flour;
  • 0.25 cups of milk;
  • 1 clove of garlic;
  • salt, spices to taste.

Cut the chicken fillet into thin long pieces. Prepare the marinade by mixing balsamic vinegar, soy sauce, ground black pepper, garlic and sunflower oil in a bowl. We mix everything until smooth.

Pour the chicken fillet with marinade and leave for 1.5-2 hours. We string the fillet strips onto a skewer, threading the skewer in length.

Cooking batter. Mix raw chicken yolks with milk, add salt and pepper to taste, add flour, knead. Beat the egg whites until fluffy and gradually mix them into the dough. The mass is quite thick.

Roll each prepared semi-finished kebab in flour, then dip in batter. Spread on a baking sheet greased and covered with parchment and bake at 200 degrees for about 30 minutes.

Barbecue baked in a jar

Barbecue in the oven can be cooked in a jar. The advantage of this method is that the juices in the meat are better preserved, and it is almost impossible to overdry the kebab. In a jar, you can cook barbecue from different meats, here is one of the options.

  • 1 kg of meat (preferably pork neck);
  • 150 ml of light beer;
  • 0.5 lemon;
  • 3 onions;
  • salt, pepper, seasonings to taste.

Cut the meat into pieces the size of a large walnut. Mix meat with onions, which are cut into circles. Season with spices to taste, do not add salt yet. Pour in the beer, cover the meat with an inverted flat plate and put a load on top. Marinate for 2-4 hours.

We take an ordinary glass jar with a capacity of 3 liters, it should be dry and clean. We will also need skewers long enough to fit in the jar. Thread meat onto skewers, mixed with onion rings.

Place the rest of the onion in the bottom of the jar. If desired, you can pour 2-3 tablespoons of "liquid smoke" into the jar. We install prepared skewers in a jar (4-6 pieces). Cover the top of the jar tightly with foil. Set the jar in a cold oven. If he cooks in two jars, then we make sure that they do not touch each other and do not touch the walls of the oven.

Turn on the oven at 200 degrees and leave to cook for 1 hour. Then turn off the oven and let the jars cool a little right in the oven. After 20 minutes, we take out the jar and remove the kebabs from it.

Chicken skewers with potatoes

Shish kebab in the oven can be cooked at the same time as a side dish, for example, with potatoes.

  • 1.5 kg of chicken fillet (from the thighs);
  • 4 bulbs;
  • 50 ml of vinegar (9%);
  • 7 potatoes (large);
  • oil for greasing the pan;
  • salt, spices to taste.

Cut the fillet into pieces, put in a bowl. Add salt, pepper and other seasonings to taste. Garlic powder, curry, fragrant dry herbs are very suitable. We cut the onion thinly - halves or quarters of rings. Mix with meat and pour in vinegar. Let marinate for 1-2 hours.

Peel potatoes, cut into thin slices. We cover the baking sheet with parchment or foil, grease it well with oil. Lay out potato slices. Sprinkle with salt, pepper, you can add a pinch of nutmeg or other spices.

We spread a layer of onion from the marinade on the potatoes, and then distribute the skewers, on which the pieces of marinated chicken fillet were strung. We put the baking sheet in a preheated oven (180-190 degrees), cook for about 30 minutes. We periodically look into the oven, as soon as the upper part of the kebabs is browned, you need to turn them over. Potatoes in the process of baking are soaked with meat juice and it turns out very tasty.

We cut a piece of pork into pieces the size of a walnut, chop the onion into half rings. Mix meat with onions, add spices and fragrant dry herbs. Drizzle with vegetable oil and knead with your hands. Let marinate for 2 hours.

We prepare vegetables. We cut young zucchini into circles, pepper into slices, and tomatoes into slices. Sprinkle the vegetables with dry oregano and basil, pour over the soy sauce.

We turn on the oven at 220-230 degrees. We put the marinated pork on skewers. We cover the baking sheet with parchment, grease it with oil. We spread the skewers with kebabs and bake for 20 minutes. Then we spread mugs of zucchini on top of the kebabs, and after five minutes we put skewers on the zucchini, on which pieces of pepper and tomatoes are strung. Bake another 5-7 minutes. The dish is ready.

Rather, the recipe is the most banal - meat baked in the oven on skewers, but it turns out that even from such a banal recipe you can cook a kebab in a smoky oven, the taste is not much inferior to real kebabs! It was an experiment for us, and it turned out to be so successful that I can't help but share the result with you, it's really gorgeous!

Firstly, for a delicious juicy kebab, we need good meat, I cooked a pork neck in this marinade and also cooked boneless chicken thighs according to the same recipe - amazingly tasty and juicy meat is obtained.

The second task of a juicy kebab, after the marinade, is to fry it correctly and not overdry the meat. It is impossible to give clear instructions here, so the readiness of the barbecue is controlled visually. I can outline the following key points that you should focus on when cooking. I will explain why there cannot be a single solution for cooking time and it is given conditionally: the cooking time will depend on the size of the pieces of meat, on the type of meat (it is pork, chicken, lamb, beef, fish, offal or something else - each type of meat will cooking time and temperature) from actual oven temperature, cooking time, etc. - you need to take into account all these nuances in the aggregate and then you will get an excellent result. In this case, with pork, be guided by the appearance of the barbecue - the pieces of meat should brown a little during cooking, and decrease quite a bit in volume. If the pieces are greatly reduced in volume, this is overdried meat. Readiness is checked by cutting the thickest part of a piece of pork with a knife - the juice should be transparent. Pork skewers must be completely fried, because. pork is not allowed to be eaten uncooked, as, for example, it may be forgivable (and sometimes desirable) for lamb or beef.

Let's move on to the next moment of cooking kebabs in a smoky oven, at home. And if you want to get a real, natural smoke flavor, not with chemical liquid smoke, but in its most natural form, you need wood chips. You can buy it in any large store, in a hardware or hardware store, especially since it is easy to get. Wood chips are needed from hardwood or fruit trees: alder, beech, rosemary, pear, apple, etc. Only conifers are not suitable for smoking.
If you want to get a barbecue with smoke, then the wood chips must be set on fire, otherwise the smoking flavor will not work. Of course, when working with open fire, be sure to follow all fire safety measures - I wrote more detailed instructions about this in the recipe, I just have to warn you to be vigilant and provide yourself with all the necessary elementary safety measures. Although, in fact, nothing terrible happens when working with fire: you put some chips in a foil mold, put it in the oven, set it on fire and close the oven - the flame quickly goes out in a closed oven, without air, the chips slowly smolder and thanks to this impregnates the meat with an amazing subtle smoked aroma. Everything is simple and elementary, nothing complicated, only if necessary, you will need to ventilate the room. The more wood chips you set on fire, the stronger the smoked flavor of the kebab will be, but the smoke will also be greater. Therefore, do not get carried away if you are cooking barbecue in the apartment, especially if you do not want the whole house to be aware that you are cooking barbecue in the oven, instead of the grill.

The cooking process consists of the following steps:

  1. Wash the pork, pat dry with paper towels and cut into 2 x 2 cm pieces.
  2. In a separate bowl, combine all the ingredients for the marinade and mix them well together.
  3. Dip the meat pieces into the marinade. Mix them with your hands. You can prick the meat with a fork to marinate it better.
  4. Place the marinated pork in the refrigerator for at least 45 minutes (the longer the better).
  5. Line a deep baking sheet with foil.
  6. Remove the stems from the mushrooms, cut the onion into large pieces.
  7. Take 4 skewers. String a few pieces of meat on each, alternating them with onions. Place mushrooms on both ends.
  8. Transfer the skewers to a baking sheet.
  9. Preheat the oven to 230°C. Place the tray on the top level.
  10. Cook the kebab for 15 minutes on one side, then turn the skewers over. Continue baking for another 15 minutes.

  1. Pork (1 kg) cut into pieces. Sprinkle the meat with a mixture of peppers (½ tsp) and ready-made seasoning for barbecue (1 tbsp), pour vinegar (1 tbsp) and lemon juice (3 tbsp). Stir the meat and send it to the refrigerator for at least 2 hours, be sure to cover the dishes with a lid.

  1. Dry the pork (800 g), cut into small pieces and put in a deep bowl.
  2. Prepare any marinade for pork or chicken. You can use the first recipe and make a marinade from yogurt or based on vinegar and lemon juice, as in the second case.
  3. Prepare the jar: it must be dry inside and out.
  4. Thread meat onto wooden skewers, alternating with onions and thin bacon (optional). Position the skewers vertically in the jar. Tighten the top with foil folded in two layers.
  5. Put the jar in a cold oven, then set the temperature to 220 ° C. Barbecue 1 hour. Then remove the foil and continue cooking for another 10 minutes to brown the meat.

The whole process consists of the following steps:

  1. Pork neck (700 g) cut into medium-sized pieces and marinated in a mixture of soy sauce (4 tablespoons), vinegar (1 tablespoon), black pepper and nutmeg (a pinch each). Leave the meat on the table for 2 hours.
  2. Prepare a baking sheet by lining it with foil and pouring wood chips into it. Place a baking rack on top.
  3. Thread meat onto skewers.
  4. Preheat the oven to 250°C.
  5. Pork on skewers quickly fry in a grill pan without oil, then transfer to a wire rack.
