This is a version of the simplest pizza dough with kefir. It’s very easy and quick to prepare, so you can even delight your family with this pizza for breakfast. Kefir dough is generally a real lifesaver; everything that comes out of it is simple and tasty.

To prepare you will need frying pan with thick walls.
Active cooking time: 15 minutes.
Number of servings: This amount of ingredients makes a pizza with a diameter of 20 cm.

Ingredients:

  • flour – 250 grams;
  • kefir – 200 ml;
  • soda – ½ tsp;
  • egg – 1 pc.;
  • refined oil – 3 tbsp. l.;
  • salt – ½ tsp.

  • Before you start preparing the dough, kefir needs to be heated in the microwave.. This will allow you to knead the dough homogeneously and without lumps. And then you will have a delicious kefir pizza.
  • Kefir can be replaced with natural yogurt, sourdough or sour cream. You can make this dough with yogurt.
  • You can adjust the thickness of the dough yourself. The less flour you add, the more liquid the dough will be.
  • If you still decide to make pizza from thick dough, then first place the base separately in the oven for 10-20 minutes. This way the flatbread will bake better and your pizza will not lose its taste.
  • Bake the base only in a preheated oven.. Baking temperature in a gas oven is 200-220 degrees, in an electric oven – 180 degrees.
  • Thick thin pizza dough with kefir can be prepared more than once. I often do this so as not to waste time on preparing the dough; I simply wrap the remaining dough in cling film and freeze it. A few hours before cooking, I transfer the dough to the refrigerator. Then I remove the film, put the dough in any convenient container, cover with a towel and leave it warm for about an hour.

First, heat the kefir in a saucepan until warm (heat to a temperature of 36-37 degrees). If kefir is hot, it will curdle. Add soda and salt to the kefir, mix, the kefir should foam. Add egg and sugar, mix.

Sift the flour. First pour 180 grams of flour into the pan with the kefir mixture and begin kneading the dough with a spoon. Add flour and mix with a spoon until you have a soft, sticky dough, like very thick pancakes. It took me 230 grams of flour. If the dough turns out to be too liquid, then add a little more flour, but at the same time make sure that the dough does not turn out too thick.

Leave the dough for about 15 minutes, during which time you can prepare the tomato puree and filling, turn on the oven to heat to a temperature of 200-220 degrees.

To prepare tomato puree, remove the skin from the tomatoes (optional), cut them into pieces, add salt, pepper, vinegar, vegetable oil, sugar, and grind with a blender into a homogeneous puree. Let's prepare the ingredients for the filling. Grate the cheese, cut the bell peppers and tomatoes into slices.

Grease a baking pan with vegetable oil (I have a standard baking pan). Spoon the dough into the center of the mold.

Once again pour 1 teaspoon of vegetable oil and use a spoon to form a circle 0.5-0.7 cm thick.

Spread the prepared tomato puree onto the dough in an even layer and sprinkle with 0.5 teaspoon of Italian herbs.

Sprinkle again with 0.5 teaspoon of Italian herbs. Place the pizza in an oven preheated to 200-220 degrees for 15-20 minutes. Then place a second portion of cheese on the pizza and cook for another 2-3 minutes until the cheese melts. Delicious, tender, soft yeast-free pizza is ready!

Quick kefir pizza in the oven - a simple recipe without yeast - turns out thin, and after baking it remains soft and does not go stale for a long time. You can choose any filling, chicken and pineapples, mushrooms, sausage, vegetables and other products that are in the refrigerator will do. This time I used sausage, bell peppers, tomatoes, Crimean onions and olives. It is best to use tomato sauce as a sauce. If you don’t have time to prepare it, then ketchup or tomato paste diluted in water will do (I recommend adding a mixture of Italian herbs for flavor). Any hard cheese or mozzarella will do.

Preparation

    For the dough, combine all the liquid ingredients in a bowl at once: kefir, eggs and sunflower oil. Kefir is suitable for any fat content; it needs to be heated to room temperature (then the reaction with soda will be better).

    Lightly whisk, add salt, sugar and soda, stir thoroughly. Kefir will extinguish the soda on its own, no need to add vinegar.

    Sift about half the flour into a bowl and stir with a whisk or spoon.

    As soon as the dough becomes thick, add the remaining half of the flour sifted through a sieve and knead with your hands. The dough should be soft and not stick to your hands. If necessary, you can add a couple more tablespoons of flour, but do not overcrowd the dough, otherwise it will turn out tough. Leave the dough for 15-20 minutes while we prepare the filling - during this time we chop all the products, grate the cheese, and prepare the tomato sauce.

    Divide the dough into 3 parts - you get 3 pizza pieces. Roll each part into a flat cake.

    Transfer the cake to a sheet of parchment paper sprinkled with flour. Lubricate with sauce.

    Place the filling on top.

    And sprinkle with a portion of grated cheese. We transfer the workpiece to the baking sheet: I turn the baking sheet upside down (so that the sides do not interfere), and then I simply bring it to the table just below the level where the pizza lies, lightly pull the parchment towards me, and as a result the pizza ends up on the baking sheet.

  1. The eggs are thoroughly cooled, after which they are beaten with a mixer or blender until foamy (as for a sponge cake). This will give the dough a special fluffiness and tenderness.
  2. Vegetable oil is poured into the egg mass in a thin stream. The beating continues.
  3. Kefir is poured into the mixture with the mixer turned off.
  4. Next, add salt to the ingredients and start adding flour. First, lightly beat the ingredients with a whisk, then continue kneading with your hands.
  5. Soda is added last.
  6. The resulting soft but dense yeast-free pizza dough is sprinkled with flour, rolled into a ball and wrapped in film for “rest” for half an hour.

This version of the dough, although yeast-based, is unleavened, and therefore no less fast.   3. When bubbles begin to appear on the surface of the base, you can add the remaining flour to it.
  4. The mass should turn out to be viscous and elastic and at the same time easily lag behind the dishes and fingers. It's better to knead it with your hands.

There is no need to wait for the dough to rise; you can immediately roll it out on a baking sheet or in a mold.

This is a longer pizza dough recipe. But the result is a very delicate, appetizing base. To prepare it you use: 160 ml kefir, 1 tsp. dry yeast, 3 tsp. sugar, 230 g flour, a pinch of salt.


  1. Dough is prepared from kefir, yeast, sugar and 50 g of flour. To do this, add the remaining ingredients to the warm milk product and mix thoroughly. The dough can stand in a cool place for about 12 hours without the risk of spoiling.

With added margarine

This recipe will definitely appeal to those who like pizza with a thin and crispy base. This dough is often prepared in famous pizzerias. In addition to full-fat kefir (90 ml), the following will be used: 90 g of creamy margarine, 3 g of ammonium (or regular baking soda), 1 tbsp. flour.

  1. The flour is thoroughly sifted at least 2 times onto the work surface and laid out in a mound.
  2. Cold margarine is finely chopped on top with a sharp knife.
  3. Flour and dairy product are ground into crumbs by hand.
  4. The mass is again collected on the table in a slide, inside of which you need to make a small depression, add soda, salt and cold kefir.

This option will be a salvation for those who want to make homemade pizza, but do not have time to tinker with the base for a long time. Even a novice housewife can easily understand the recipe. Need to use: 2 tbsp. flour, 1 tbsp. kefir, egg, 6 g baking powder, 4 tbsp. l. olive oil, a pinch of salt.

  1. Beat the egg well with a fork. But it should not turn into thick foam.
  2. Kefir and butter are slowly poured into the egg and salt is added. The ingredients are mixed until a homogeneous mass is obtained.
  3. Separately, the flour is sifted with baking powder. Next, it is poured in portions into the egg-kefir mixture.
