  • chicken eggs – 3 pieces
  • granulated sugar – 100 g

Preparation:

  1. The butter must be removed from the refrigerator in advance so that it softens and comes to room temperature. Cut the softened butter into small pieces and place in a large bowl.
  2. Add granulated sugar to a cup with butter. Using a mixer at medium speed, beat the butter and sugar until pale.
  3. Continuing to beat the butter and sugar, add one egg at a time. The mass should become homogeneous in structure and creamy.
  4. Sift the required amount of flour into a separate cup, add baking powder and salt, mix well.
  5. Add the flour mixture to the butter mixture and mix well with a wooden spoon until smooth. The dough will be quite thick.
  6. Place 1/3 of the resulting dough in a separate cup.
  7. Add confectionery poppy seeds to the rest of the dough and mix well so that the poppy seeds are evenly distributed throughout the dough.
  8. Thaw freshly frozen cherries, drain the resulting juice, add starch and stir until the berries are well coated with starch.
  9. Line a baking pan with parchment. First, place the dough without additives into the mold and smooth it with a pastry spatula.
  10. Place cherries coated in starch in an even layer on top of the dough.
  11. And only then, put the dough with the addition of poppy seeds on the cherries. Flatten the dough well with a pastry spatula.
  12. Bake the cake in an oven preheated to 180 degrees for about 35 minutes, until cooked and browned. Check the readiness of the cake with a long splinter. Use a splinter to pierce the cake in the middle, preferably reaching to the middle of the depth of the cake. If the splinter is wet, then the cake is not ready yet; you need to continue baking. If it is dry, then this is a sure sign that the cake is ready.
  13. Remove the finished cherry cake from the oven and cool in the baking dish.
  14. When the cake has cooled completely, sprinkle it with powdered sugar, remove from the baking pan onto a plate and cut into portions. Bon appetit!

The principle of preparing the dough is the same as for a large cake (except that there are slightly fewer ingredients), only this time I decided to pour the dough into small silicone molds for a change. It turned out cute, tasty and beautiful! I offer you another homemade baking recipe.

How to bake:

First, you should prepare the cherries: remove the seeds if the berries are fresh, or immediately put them in a colander if they are canned, so that the excess juice drains from the cherries - it is not needed in the dough; due to the large amount of juice, the cake may turn out viscous and unbaked in taste.

Prepare the dough as usual for muffins: grind the eggs with sugar.

Pour sour cream into a bowl, add a spoonful of soda and quench with vinegar, stir quickly.

Add melted butter and stir again.

Then add some of the flour and mix again.

Spread the finished dough with a tablespoon into silicone molds about half the height of the mold, but not more than 2/3, otherwise the cupcakes may “run away.” You can use paper or metal molds, but in the former the baked goods are deformed, and in the latter it is very difficult to wash off dried dough.

Place the molds with the dough on a baking sheet and place in a preheated oven.

Over medium heat, the cupcakes will be ready in 25 - 30 minutes (test with a wooden stick).

    Finally, add the remaining whites one spoon at a time and knead the viscous, sticky dough with pieces of berries.

    The dough is suitable for both large and portioned products, both for the “brick”, “ring” configuration, and others. Grease the inside of a heat-resistant mold with a piece of cold butter, sprinkle with flour, shake off the excess - throw on the “French shirt” known to bakers. Fill with dough - send the semi-finished product into a preheated oven, bake at 180 degrees for 35-45 minutes.

    We pierce the “grown” cherry cake with a splinter - check the dryness of the crumb, cool it in a container, then turn it over onto a plate/board and sprinkle with sifted powdered sugar if desired.
