Rinse the buckwheat.

Transfer the buckwheat to the minced meat.

Pour boiling water and place the dishes on the stove. When the water boils, taste for salt and add salt if necessary.

Traditional way of cooking like a merchant

Buckwheat in the merchant's style is an ancient dish of Russian cuisine. It was always prepared for holidays, served to dear guests, and cooked for weddings and birthdays. The secret of the porridge is a large amount of carrots and onions, which were mixed with minced meat and buckwheat. Merchant porridge was cooked in a Russian oven, simmered in pots, but we suggest making it in a frying pan.

For merchant-style porridge, it is better to use mixed minced chicken and pork: the porridge will be more tender.

Let's prepare the following ingredients:

  • pork, chicken fillet 300 g each;
  • 3 carrots;
  • 2 tbsp. buckwheat;
  • large onion;
  • water – 3 tbsp.;
  • drain butter – 50 g;
  • greens - a large bunch;
  • salt pepper;
  • non-fragrant oil – 50 ml.

Grate the carrots and cut the onion into cubes. Fry the vegetables in a frying pan, add the minced meat and fry everything a little again. Fill with washed buckwheat and fill with water. Let the porridge boil, cover the pan with a lid and simmer until the cereal is boiled. When the buckwheat is cooked, stir and generously grease with butter. The result is a flavorful porridge with pieces of vegetables and meat. Serve to the table, sprinkled with herbs. We eat it with fresh cabbage salad, cucumber, seasoned with low-fat sour cream.

In a slow cooker

Buckwheat with minced meat is prepared quickly in a slow cooker. There is no hassle with the dish - the oven will cook everything on its own. And this dish also resembles the taste of dishes from a Russian stove - the grains are boiled, the dish becomes airy, and the porridge melts.

The porridge will turn out fluffy if you maintain the proportions of water and cereal in a ratio of 1:2.

Let's prepare the following components:

  • minced beef – 300 g;
  • onion – 1 pc.;
  • carrots – 2 pcs.;
  • a glass of buckwheat;
  • salt pepper;
  • greenery.

Buckwheat with minced meat in a slow cooker is a simple and familiar dish to everyone.

At the bottom of the multi-bowl, fry the minced meat, add grated vegetables. Fill everything with a glass of washed cereal and fill it with water. Close the lid of the multicooker, turn on the “Porridge” mode and simmer until the signal indicates the end of cooking. Add a piece of butter. Mix. A fragrant, crumbly dish for the family is ready! We eat it with black bread, grated carrot salad, cheese and garlic, dressed with homemade mayonnaise.

In a pot in the oven

Buckwheat in a pot in the oven will easily take pride of place on the holiday table or family Sunday lunch. Nourishing, but light, aromatic and airy in a beautiful ceramic pot will appeal to even capricious little gourmets, especially if you put a spoonful of sour cream on top.

The dish will look even more impressive if you use yeast dough lids instead of ceramic lids (they can be eaten instead of bread).

We will need a glass of buckwheat, 300 g of minced meat, a large onion and carrot, salt and pepper to taste.

Preparing porridge is very simple:

Ingredients:

- buckwheat – 1 glass;
- minced meat or lean pork – 300-350 g;
- onion – 1 large onion;
- carrots – 1 piece;
- tomato sauce – 3 tbsp. l;
- salt - to taste;
- vegetable oil – 4 tbsp. l;
- black pepper – 2 pinches (optional);
- water (boiling water) – 2 glasses.

Recipe with photos step by step:

Cut a large onion into cubes or chop into thin quarter rings. Heat refined vegetable oil in a deep frying pan or cauldron and add onion.

We make the heat not very strong, a little stronger than medium, and fry the onion until a beautiful golden hue appears. While the onion is frying, cut the carrots into strips. Add to the onion, stir, fry for about another five minutes, soaking the vegetables in oil.

If you don’t have ready-made minced meat, before frying the vegetables, grind the lean meat through a meat grinder. We move the vegetables to the side and place the minced meat in the frying pan. We increase the fire to almost maximum.

Mix the minced meat quickly, breaking up any lumps with a fork or spatula. Then lightly fry and mix with carrots and onions.

Season with salt and ground pepper. For taste, add tomato sauce (optional, this is an optional ingredient). Fry the tomato for several minutes, reduce the heat to low.

We wash the buckwheat, changing the water several times. We choose specks and nigella. Pour buckwheat into vegetables with minced meat. You can first fry the cereal in another frying pan without adding oil, then mix with vegetables and minced meat.

Pour in two glasses of water. Add salt to taste immediately before the cereal has absorbed all the water. Cover tightly and cook for 30-35 minutes without opening the lid.

Buckwheat should absorb all the water and steam well. After turning off, leave the buckwheat to brew under the lid, and stir gently before serving. There is no need to stir the buckwheat during cooking; it will not turn out crumbly.

We cut the green onions into rings, take out pickled or pickled tomatoes and cucumbers. Place on plates, sprinkle buckwheat with minced meat with green onions and serve. Bon appetit!
