Let's start preparing the shortcrust pastry. To do this, chop the flour, salt, sugar, baking powder and pieces of butter into flour crumbs.

Add the egg, add 1-2 tbsp if necessary. ice water and knead elastic dough.

Divide the dough into 2 unequal parts.

Roll out most of it into the mold, lifting it along the sides (the mold must be greased with vegetable or butter). Place the pan with the dough in the refrigerator for 30 minutes.

Let's start preparing the filling. Mix eggs with curd mass and starch.

Pour the curd dough over the shortbread dough.

Roll 2 sausages from the remaining piece of shortcrust pastry and place them in a cross on top of the filling.

Pour sugar and egg there, and use your hands to knead the dough until smooth. Roll the finished mass into a ball, wrap in cling film and place to rest in the refrigerator for 30 minutes.

Step 2: Prepare the curd filling.



While the dough is resting, you can prepare the filling, let's start with the curd filling. To begin, rub the cottage cheese through a sieve to make it softer and the filling to be airy and tender. Add sour cream, eggs and sugar to the cottage cheese plate. Beat everything with a mixer until smooth. As a result, you should end up with a snow-white mass of creamy consistency.

Step 3: Prepare the berries.



Pour the berries into a colander and sort through. Firstly, remove the spoiled ones and those that have begun to deteriorate, and secondly, remove the twigs and small leaves so that they also do not get into the pie. After this selection, rinse the remaining berries and shake them, getting rid of excess water.

Step 4: Bake a pie with berries and cottage cheese.



Set the oven to preheat to 180 degrees Celsius, and while it reaches your desired temperature, form the cake. To begin, grease the springform pan well with butter, then place the shortbread dough into it. Form sides on the sides. Make light punctures along the entire perimeter of the resulting cake using a fork. Pour the curd filling onto the laid dough, smooth it with a spatula and pour the berry mixture on top, also distributing it evenly over the entire area of ​​the pie. Place everything to bake in the oven for 35 minutes. During this time, the filling will set, the cake will become crusty, and the berries will give juice.
Remove the finished pie from the oven immediately, but do not rush to remove it from the mold, wait until it cools down, and to do this, just leave it for a while at room temperature. Remove the pan from the cooled product and proceed to serving.

Just cut it with a knife into the number of pieces you need and transfer the resulting slices to special dessert saucers. Preparing dough for cottage cheese pie with berries. To do this, take 250 grams of flour and mix it with 1 packet of baking powder. Then add the butter, which must first be removed from the refrigerator so that it melts a little. Mix flour and butter into crumbs.


Then add 120 grams of sugar and 2 eggs to the dough.


Mix the dough until smooth and put it in the refrigerator.


Let's prepare the filling for our cottage cheese pie. For this we need 1 egg and 50 grams of sugar. Beat them with a mixer until foam forms.


Then add 75 ml. sour cream and cottage cheese. The cottage cheese must be prepared in advance. It must be crushed in a blender. If you don’t have a blender, you can grind the cottage cheese through a sieve. Or you can take curd mass, it is more homogeneous. Beat everything with a mixer until smooth.


The filling is a little thick.


Now let's get to the berries. We used frozen currants for the cottage cheese pie. You can take any other berry. The berries must be completely defrosted, washed and drained.


Let's start forming the cake. We took a springform pan, it will be easier to remove the cake from it. Form 24 cm. We spread the dough, distributing it so that small sides are formed on the sides and a depression in the middle.

How to cook shortbread pie with cottage cheese and berries.

1. First, prepare the dough. Take the butter out of the refrigerator in advance and leave it at room temperature for half an hour. Then put the already softened butter in a bowl, add brown sugar to it (you can also use regular sugar). Grind the butter and sugar into a homogeneous mass. Then add salt and milk to the butter-sugar mixture. Mix and sift flour into the resulting mixture. Let's knead the dough.
Roll out the dough to the diameter of your pie pan so that it covers the bottom and sides of the pan. Grease the mold with a small amount of sunflower oil. Using a rolling pin, transfer the rolled out layer into the mold and level the dough along the bottom and sides of the mold.
2. Now let's prepare the filling. Pour the cream into a saucepan and put it on the fire, heat the cream until it becomes warm. Remove the saucepan from the heat and add sugar to the cream, stir until the sugar is completely dissolved. Pour flour into a small bowl and pour in a little cream (1-2 tablespoons), stir until smooth and pour this mixture into a saucepan with cream.
Turn on the oven and preheat it to a temperature of 200 degrees. We rub the cottage cheese through a sieve and add it to the cream in a saucepan, knead thoroughly. Place the filling on the dough in the form and level it out. Place the pan in the oven and bake the cake for 30 minutes, then reduce the temperature to 180 degrees and bake for another 30 minutes. After the pie is baked, turn off the oven and leave the pie to cool in it for 1 hour. Thanks to this, the curd filling will be perfect and without cracks!
3. Now we will prepare the filling for the pie. Pour apricot jam into a saucepan, add water and stir. Place the saucepan on the fire, add agar-agar and bring the mixture to a boil. Cook for half a minute, stirring constantly. The result is apricot jelly.
4. Remove the cooled pie from the oven. We wash the berries and place them in a colander to drain. Then we place the berries on the surface of the curd filling on the pie and fill it with the resulting apricot jelly. Place the pie in the refrigerator for 1 hour to cool.
After this, we serve the pie to the table and have a tea party!

It is better to cook the jelly right before applying it to the fruit; jelly on agar-agar hardens quickly, so it must be placed warm on the fruit. And the pie must be served chilled - at least 1 hour in the refrigerator, then it will taste better and the pieces will be cut perfectly even.

Recipe

1. Turn on the oven (200 degrees). Beat butter with sugar.

2. Then add the egg, continuing to beat.

3. Sift flour into the mixture.

4. Knead the dough (very soft, sticks well to your hands).

5. Place the dough covered with cling film in the refrigerator, meanwhile prepare the filling.

6. Rub the cottage cheese through a sieve (or grind it with a blender), add sugar, sour cream, egg, vanillin, starch, mix everything thoroughly (the texture of the cream is slightly dense, but tender).

7. Grease the mold with oil, distribute the dough, forming the bottom and sides.

8. Spread the curd filling. Place the berries on top of the cottage cheese and gently press them with a spoon (you can mix the berries with the curd cream in advance, but delicate berries can turn into porridge). Bake the pie for 35 minutes.
